Dietetic Internship Program at Miami Valley Hospital
Clinical
Renal/Diabetes
• A variety of clinical nutrition classes are needed to
successfully complete the clinical rotations
• Learn about nutritional needs of patients with acute
renal failure, chronic renal failure, on homodialysis, and
peritoneal dialysis, continuous veno-venous hemodialysis,
and kidney transplants
Medical/Surgical
• Visit an outpatient dialysis clinic
Clinical Orientation
• Disease states focused on during this rotation include
disease, diverticular disease, Celiac disease, colon cancer,
disorders, and gallbladder disorders
Pulmonary
• Learn about medical nutrition therapy for patients with
Maternity/NICU
• Interns have the opportunity to observe an endoscopy
and/or PEG placement
• Participate in activities in the Center for Women Healthcare
including high risk maternity clinic
Rehabilitation/Neurology/Trauma
• Develop an understanding of the dietitian’s role in the
Neonatal Intensive Care Unit
• Learn about and treat common nutrition problems
associated with CVA, Guillian Barre Syndrome, Parkinson’s
Disease, closed head injury, Multiple Sclerosis, spinal cord
injuries, etc.
Long-Term Care
• Learn about government and Medicare regulations of longterm care facilities (MDS and RAP sheets)
• Work closely with staff in speech, physical and occupational therapies
• Gain an appreciation for the unique challenges of providing
medical nutrition therapy to the geriatric population
• Work with patient’s with dysphagia and counsel patients
on the appropriate diet
Pediatrics

• Experiences take place at Children’s Medical Center in
Dayton www.childrensdayton.org.
• Attend various clinics and counsel patients with cystic
Oncology/Blood and Marrow Transplant
• Understand treatment of cancer patients and identify
nutrition concerns related to treatments and the disease
• Focus is on cancer, HIV, and bone marrow transplant patients
obesity
• Choose a focus and complete a case study on a patient
with that disorder
Critical Care/Burn
Continued on back
• Develop a more advanced understanding of enteral and
parenteral feeding in the critically-ill population
• Provide MNT to adult burn patients
• Observe wound dressings

Bull Family Diabetes Center
• Participate in the activities of an outpatient center
focused solely on the treatment of diabetes

educators whose goal is self-management by the patient
• Participate in individual counseling sessions and teach a
diabetes education class
Weight Loss Surgery
• Develop an understanding of the dietitian’s role in the
weight loss surgery center
• Provide medical nutrition therapy to both inpatients and
outpatients
Community
Cardiac Rehab/Wellness
• Participate in activities of a hospital-based Wellness Center
and cardiac rehab program, including patient counseling
• Participate in outpatient counseling and adapt nutrition
messages to the client/population
• Demonstrate the ability to give effective presentations
to consumers
• Write nutrition-related magazine articles
• Write business proposals and develop a program for the
MVH Wellness Center
Food Service Management
Orientation
Many classes and experiences help interns successfully
complete rotations.
Patient Food Service
• Assist with tray assembly and delivery
• Perform tray audits and tray delivery audits; follow-up with
• Conduct test trays each day and assist in making improvements
to recipes regarding taste and appearance while keeping in
mind issues associated with the thermalization system, and
food costs
• Work with room service
Food Production and Sanitation
• Learn principles of purchasing, inventory, HACCP, yield
studies, the cook-chill system, and Cryovac systems
• Interact with food service sales representatives
• Conduct an equipment study
Retail Operations
• Assist in retail operations of the hospital’s two cafeterias and
the medical staff dinning room (food production, services,
menu analysis, recipe improvement and standardization)
• Assist with catering events at the hospital
• Participate in health fairs, cholesterol screenings, etc.
• Conduct and follow-up with customer satisfaction surveys
Public Health
Activities and Projects
• Participate in WIC, prenatal clinic, and other experiences
with Public Health Dayton and Montgomery County
• Attend breastfeeding classes with a lactation consultant
• These weeks give interns time to complete projects from
the food service management rotations as well as one of
the special meal events
Intern Choice
New Manager Training
Interns will determine their experiences and learning
objectives for this week based on areas of interest.
• Time is spent learning management principles with other
new managers
Clinical Staff Responsibility
Food Service Management Staff Responsibility
Interns will select a clinical area and manage the daily operation.
• Interns select an area of the department in which they
will assume the role of manager, including financial and
human resourse issues.
• Complete an operations analysis.
