Featured Story
Volunteer Spotlight
There are some people in this world that do not let their age define who they are. This stands
true for one of our own volunteers. Her name is Lois Davenport, she is 83 years old, and lives life as if
she were 20. She has been a volunteer at St. Joseph Mercy Livingston within the Radiology department
for 18 years.
Lois was a Medical Surgical Nurse for 20 years. She then decided to change gears a little bit and
worked as a computer programmer for another 20 years. After retirement Lois wanted to continue
keeping busy by volunteering. This is when she got involved with our volunteer program at St. Joes. She
also volunteers for Meals on Wheels and at her church.
Lois believes that the more active you are the longer life you will live. This is why at the age of 83,
Lois decided to go sky diving. This is something that has always been on her bucket list and she said her
experience was amazing. She also recently went on the African Safari in Tanzania. She stayed in a lodge
and took trips to see the wildlife in the morning and then visited the nearby villages in the afternoon.
This trip was a trip of a lifetime! Lois does not plan on slowing down any time soon, her next adventure
is zip lining. On her not so adventurous days Lois enjoys reading, going to plays, and just being with her
friends.
Lois is someone we can all take a lesson from. Enjoy each day of your life to the fullest and don’t let
anything or anyone hold you back from experiencing life's adventures.

Recipe
Lasagna Alfredo Roll Ups
Want to impress your family with your cooking skills? This quick simple recipe is easy to make
and will make you look like a top chef.
Ingredients
1. 8 lasagna noodles
2. 1 tablespoon olive oil
3. 1 (10 ounce) package
frozen chopped spinach
4. 2 tablespoons thinly sliced
green onion
5. 1 pint part-skim ricotta
cheese
6. ¼ cup grated Parmesan
cheese
7. ½ teaspoon of salt
8. 1 egg
9. 21 ounces Alfredo style
pasta sauce
10. 1 cup mozzarella cheese
Directions
1. Bring a large pot of lightly salted water to a boil. Add lasagna
and cook for 8 to 10 minutes or until al dente. Rinse in cold
water and drain well.
2. Meanwhile, in a large sauce pan over medium heat add oil
and cook broccoli or spinach and green onions until tender,
stirring frequently. Remove pan from heat and stir in ricotta
cheese, Parmesan cheese, salt and egg.
3. Preheat oven to 375 degrees F (190 degrees C).
4. Place noodles in a single layer on a sheet of waxed paper.
Evenly spread some of the cheese mixture on each noodle.
Roll up each noodle from the short end, jelly-roll style.
5. In a 8x12 inch baking dish, spoon about 3/4 of the Alfredo
sauce on the bottom and spread evenly. Arrange the rolled
noodles, seam side down, in the dish. Top with mozzarella
cheese and remaining sauce. Cover loosely with foil and
bake in preheated oven for 30 minutes or until hot and
bubbly and the cheese is melted. Serve.
