Page 2 CLOVER KIDS’ CORNER Smoothies for Spring — by Eric Jackson Smoothies are a great anytime snack that kids (and adults) enjoy. Smoothies are also a great way to snack veggies and leafy greens into you most picky eaters. Plus, it is an easy snack that kids can help prepare quickly and safely. The basic components of a successful smoothie are a liquid and fruits/vegetables. Honestly, the combinations are endless. Below is a list of suggested ingredients, but feel free to mix up the list and make your own combos. For four 8 oz servings (will fill up one blender) 1/2 cup liquid — I like fruit juices (orange, apple, etc) 1 cup leafy greens (spinach is relatively tasteless, and packed with nutrients) 1 banana 1 cup lowfat yogurt (vanilla or plain, regular or Greek) 1 cup berries (frozen or fresh, mixed or not) 1 tsp honey (optional — the juice may make it sweet enough) Directions are simple, too. 1. Put all the ingredients in the blender. For best blending results, start with the liquid and leafy greens, followed by the heavier ingredients. 2. Blend to a shake-like consistency. If the mix is too thick and is not blending thoroughly, add more liquid a dash at a time and try again. 3. Pour. Add a straw and enjoy.
