Outstanding Alumnus
Environmentalist and Hawaiian cultural practitioner William J. Aila Jr. (BS, general agriculture)
is deputy director of the Department of Hawaiian
Home Lands. He grew up on O‘ahu’s Wai‘anae
Coast, working on his family’s cattle ranch and
fishing the ocean near his great-grandmother’s
beach home. Aila, who served 24 years as harbormaster for the Wai‘anae Small Boat Harbor, is a
Homesteader and active member of the Wai‘anae
community. For eight years, he was president of
the Lualualei Ahupua‘a Council, a group dedicated to protecting and preserving Hawaiian
cultural sites and perpetuating cultural practices.
He served on the Wai‘anae Neighborhood Board
and as a board member for the Wai‘anae Coast
Comprehensive Health Center, Makaha Elementary School and Wai‘anae Coast Alternative Community Development Corporation. He helped advise the Army on restoration of the Ukanipō Heaiu
complex, represented Native Hawaiians on the
North-Western Hawaiian Islands Coral Reef Ecosystem Reserve Council and sat on several state
fisheries management groups.
William J. Aila Jr.
In 2010, Aila assumed statewide responsibilities as chair of the Board of Land and
Natural Resources and director of the Department of Land and Natural Resources’
700+ employees and 16 divisions and offices. In four years of inclusive, consensus-building leadership, he was credited with accomplishments on several fronts:
Facilities—acquisition of land for cultural and recreational use and conservation
for Central Maui Regional Park and Lı̄poa Point and an easement at Turtle Bay,
upgrades to the Nā Pali Coast Kalalau Trail and Fort Ruger Pathway, sand replenishment in Waikı̄kı̄, and improvements at all 20 Small Boat Harbors statewide.
Administration—settlement of the long-standing Nā Wai ‘Eha water dispute,
increased enforcement of natural resource violations, streamlined permitting for
revitalization of Hawaiian fishponds and establishment of mandatory boater education and Dam Safety administrative rules.
Environment—elevation of watershed protection as a Division of Forestry and
Wildlife priority, expansion of the Natural Area Reserve program and installation
of predator-proof fencing, mapping of coastal erosion hazards related to sea-level
rise, and helping create the Papāhanaumokuākea Marine National Monument.
Ka Lei Hano Heritage Award
The grandson of immigrant dairyman/farmer and
Kalihi poi miller Kakuichi Tottori, Ernest Tottori
succeeded his father, James Ichiro Tottori, as
general manger of Honolulu Poi Company in 1962
and has been an agribusiness innovator ever since.
Renamed HPC Foods Ltd. in 1990, the company
is not only Hawai‘i’s largest poi producer but also
one of the largest produce processing facilities,
generating sprouts, processed lomi salmon, freshcut fruits, vegetables, and value-added products
such as taro pancake mix and taro flour. HPC
also provides distribution services with their own
fleet of refrigerated trucks to other major food
distributors.
Ernest Tottori
Tottori modernized the poi processing by adding
a pressure cooker and other equipment not
previously available for poi processing. He also
imported and distributed farm machinery mainly
for the taro farmers, and he even operated an
experimental taro farm in Hāle‘iwa to share the
knowledge he gained with the farmers. He also
urged spurred growers to compete with mainland
lettuce, tomatoes and onions and urged educators to encourage and train taro
growers.
HPC Foods remains a family operation that, with its 180 employees, operates three
major facilities on ‘Oahu, and its own in-house quality assurance and food product
testing laboratory. A model for the local food industry, HPC Foods gained Global
Food Safety Initiative certification in 2013 and markets innovative new products,
such as a poi-and-lomi combo pack for the grab-and-go crowd and powder and
frozen products that make poi available to Island expatriates.
“My grandfather’s [concept] was to develop more local industry. And my dad’s
concept was to help preserve farmers in the state of Hawai‘i,” Tottori said in a
1978 oral interview. “This is what made Honolulu Poi: Looking at the future and
working together with our farmers in the state.”
His historical perspective, understanding of the agriculture industry, and clearsighted focus on what lies ahead have made Tottori a valuable friend to CTAHR.
He has worked closely with Cooperative Extension agents and provided valuable
feedback to CTAHR deans as a member of the college’s advisory council.

Maria Stewart
Samir Khanal
In her food science and human nutrition classes, Maria Stewart creates an
intellectually safe community of learners, allowing students to share alternate points of view and think critically
about the material. Students praise her
professionalism, accessibility, and strong
command of the subject matter, and
she has attracted increasing numbers of
them to the department. She excels at
teaching in a variety of formats, including distance education, large-enrollment
courses, small seminars, and studyabroad classes. She is able to reach a
wide variety of learners, not only graduate and undergraduate students, but
also colleagues, for whom she developed a workshop series to share instructional strategies, and elementary pupils,
who engage with her alternate persona
of Professor Peabody. She routinely goes
beyond the classroom, providing oneon-one feedback, help on student work,
professional guidance, and mentoring
for graduates seeking employment.
Her dedication to student learning and
achievement earned her the university’s
Frances Davis Award for Excellence in
Undergraduate Teaching in 2013.
An internationally recognized researcher
in biofuel and environmental biotechnology fields, Samir Khanal conducts
research that promotes sustainability
through the interface of bioenergy and
bio-based products with the environment, focusing on the needs of Hawai‘i
and the Pacific. He has generated more
than $3 million in research grants, with
projects focusing on advanced biofuels
using energy crops; bioconversion of
wastes into value-added products; anaerobic biotechnology for biofuels and
platform chemicals production; anaerobic digestion process control; syngas
fermentation; nitrogen transformations
in aquaponic systems and their implications for climate change; and food
waste conversion into biodiesel and
animal feed via insect farming. He has
published more than 70 journal papers
in international refereed journals, 11
book chapters, and 39 conference proceedings, as well as a highly regarded,
best-selling book on anaerobic biotechnology. He is also lead editor of a popular book on bioenergy and co-wrote the
first textbook on bioenergy, soon to be
released.

Lynn Nakamura-Tengan
Rachel Novotny
Reared on a family farm in Kula, Maui,
Lynn Nakamura-Tengan has provided
training on topics as varied as candling
eggs for small producers, rat lungworm
disease, and emergency preparedness.
She is a leader in nutrition and food
safety Extension education statewide
and nationally, working on projects such
as Nutrition Education for Wellness,
Good Agricultural Practices, and Germ
City: Clean Hands–Healthy People.
For four decades, Rachel Novotny has
devoted her career to improving the
health of children and adults, with a
particular emphasis on using nutritional
training and research to focus on the
underserved populations of the Pacific
and Latin America. She has established
scholarly relationships with international
agencies and Pacific and Asian countries.
She has collaborated with the Food and
Agriculture Organization in Rome, as
well as the World Health Organization
and the World Food Program.
Her food safety education program
for consumers and food producers is a
model of both distance and hands-on
teaching, and she champions use of
technology to enhance and distribute
information to remote audiences. She
has been crucial to implementation of
FDA’s Food Safety Modernization Act in
Hawai‘i, leveraging State funding and
developing a statewide contingent of
educators.
A member of the inaugural class of
the Western Extension Leadership
Development program for Cooperative
Extension professionals, she is also a
faculty representative for the University
of Hawai‘i Professional Assembly.
One of her most influential projects is
the Children’s Healthy Living Program for
Remote Underserved Minority Populations in the Pacific Region. The five-year
innovative community-based program
aims at reducing childhood obesity. Her
team of researchers, practitioners, and
other stakeholders foster healthier families and communities. While creating
infrastructure for sorely needed child
health monitoring and surveillance in
the region, the program has also provided scholarship training to graduate and
undergraduate students from across the
Pacific region.

Donna Meyer
Edwin Perez
CTAHR alumna Donna Meyer has
worked in the college since her undergraduate days—a total of 36 years. An
integral part of many projects, including
On-Farm Food Safety and Sustainable
Pest Management, she has a broad
range of skills and talents that makes
her invaluable to each, from handling
small-scale construction to the ability to
present scientific and technical information in a form easily understandable by
the general public.
As the farm foreman at the Maui
Agricultural Research Center in Kula,
Edwin Perez displays an outstanding
work ethic, dedication, and attention
to detail. He helps CTAHR Extension
and research faculty conduct field
experiments and demonstrations for
commercial vegetable and fruit growers
throughout the state, using his wealth
of experience with experimental design
and data collection, spray calibration,
pesticide application, worker protection
standards, and insect and disease
management. His extensive knowledge
of pesticide protocols allowed him to
spot an error in an insecticide regimen,
saving an important experiment.
Donna’s commitment to each project is
exemplary; she travels to other islands
and works outside of normal work
hours and on weekends to complete
tasks. She coordinates farm site visits,
assists with workshops and field days,
and helped design and make a portable
hot water spray tank for arthropod pest
management. In addition to performing
her own laboratory work skillfully and
conscientiously, she helps train students
and lab workers, and her contributions
extend far beyond CTAHR; as one recommender writes, “The college has
gained stature and respect in the community because of Ms. Meyer’s work.”
A tireless worker, he comes in during
vacations to check on experiments and
volunteers for the Maui County Fair,
Maui Ag Fest, researcher field days, and
other events. After his day job, he works
at the Kahului Airport as a USDA Plant
Protection and Quarantine inspector. His
great relationships with surrounding ag
producers and others in the community
benefit the center, and his good nature
makes him a highly valued co-worker.

Rebekah Morales
Even before the fall semester started,
Douglas Vincent contacted the officers
of the Pre-Veterinary Club as the newly appointed advisor to get acquainted
and offer his services. He helps set up
and publicize meetings; provides contacts; posts flyers and events; and shares
other useful information. In addition, he
coaches students on applying for veterinary school and providies resources that
enhance their education with extracurricular experiences.
Animal Sciences junior Rebekah Morales
brings strong listening skills and advocacy to her role as president of the UH
Pre-Vet Club. During her three years as
an officer (she previously served as treasurer and vice president), the club has
grown to 60 members and become increasingly active. Hikes and beach dates
enable students from O‘ahu, neighbor
islands and the Mainland to develop
a network of friends outsice the classroom. Field trips, volunteer activities and
involvement with the Hawai‘i Veterinary
Medical Association augment classroom
learning. Meetings feature speakers on
professional development topics.
A graduate student recalls Dr. Vincent’s
willingness to assist when no other advisors were available—offering or finding
answers, responding immediately, maintaining open office hours, identifying a
research project, and arranging travel
and summer employment. Quiet and
patient, he can draw out a shy freshmen, but he’ll also deliver a kind but
firm “kick in the pants” when necessary,
telling students what they need to hear.
For UH Staff Veterinarian Michael Wong,
such mentorship didn’t end with graduation. “He is a fabulous teacher who
cares deply for his students and wants
every student he teaches to succeed.”
“Rebekah devotes time to learn about
members’ interests. Her close relationships with members allow her to further
network with community organizations
[and] promote growth and development
for the Pre-Veterinary Club,” writes fellow officer Jerrisa Ching.
“She represents the club in so many
positive ways and through her leadership has taken it in many positive directions,”says advisor Douglas Vincent.
“Rebekah is a delightful, fun person.”

The CTAHR Centennial Scholarship
Gowoon Jung
Banquet proceeds support the CTAHR Centennial Scholarship
Endowment. Established to celebrate the college‘s 100th anniversary,
it provides financial support to an incoming CTAHR major who is the
first member of his or her family to attend college. 2015–16 recipient
Gowoon Jung is a Biological Engineering program major. The
Baldwin High School graduate transferred from UH Maui College.
