Summer holidays mean spending days outdoors and meals in the sun – but while you are having fun, there’s a chance that nasty
food poisoning bugs are doing the same! That’s why it’s important to make sure that the food you eat – especially chicken –
is carried, stored, handled and cooked properly; so that no one gets ill from a nasty bug called ‘campylobacter’.
Campylobacter can often be found in raw chicken and chicken that is not cooked thoroughly. You can’t see, smell or even taste
it, but it can make you very sick with food poisoning. Following the tips on this sheet can help avoid it.

Raw chicken needs to be covered and chilled on the bottom
shelf of one of these. It’s a cold place that helps keep food
fresh and safe to eat and needs to be kept at a temperature
of below 5°C. Can you check that yours is?

This is a surface that is used to cut different types of foods.
It’s very important, to make sure that separate boards are
used for separate food types (i.e. one for vegetables and
one for meat) so you avoid cross-contamination – this is
what happens when harmful germs are spread onto food
from other food, surfaces, hands or equipment.

This is very important for adults to follow, to make sure
they don’t splash and spread germs around the kitchen.
