Anders:
OK…Hello. My name is Anders and this is my friend Christopher.
Who is going to assist me in the kitchen today.
Christopher: Hello.
Anders:
I am partly Swedish and partly Indian and today I’m going to make
an Indian dish called Dosa, actually a South Indian dish. For this
you need, white beans and some Basmati rice.
First we are going to put the rice and the beans separately in two big
cups of water overnight and after that you put them in a blender.
And voila here we have a finished mix it should look like this, like a
pancake.
And for this we need a sauce that you dip it in. A sauce called
Tovayal, and for this sauce you need red chilli pepper, an onion
some ginger, a little lemon and some coriander.
Christopher: Ok, what do we do now?
Anders:
Can’t you cook?
Christopher: Of course I can,
Anders:
I’m just kidding.
Christopher: Just tell me.
Anders:
Separate these leaves of the coriander,
Chop this one in half and then maybe 2 centimetres of this and then
you put it in a blender.
When you cook the Dosa you only need to have a medium heat.
And let it heat up a little bit. You put it in the middle and spread it
out quickly so it should be very thin, very thin much thinner than a
Swedish pancake, maybe if you see this thin.
Pour it into the middle like this then…

Christopher: You said 2 centimetres.
Anders:
Yeah 2 centimetres.
Christopher: Like this is good?
Anders:
Yeah that’s perfect, well actually nothing you do is perfect.
Christopher: Yeah, Yeah.
Anders:
I fried one Dosa and it looks like this.
Christopher: I am going to start with the chilli now.
Anders:
I will help you.
Christopher: How do I chop it?
Anders:
You do something, maybe like this.
Christopher: Like this?
Anders:
Yeah like this.
Anders:
Yes I won, I won as usual.
Christopher: No, no, no, no, no. You see yours and then you see mine.
Anders:
Like that. I just put it in, yes and then the coriander and the chilli.
Yes we can take this much of the chilli.
Christopher: Is it good now?
Anders:
Let’s see. Yes that’s good but it looks like a soup. It is very strong.
We like strong food.
Christopher: Yes of course.
Anders:
Lemon.
Christopher: Yes.
Anders:
But the lemon should not take over.
Christopher: I Know, I know.

Anders:
The lemon taste should not take over you know. Do you have any
salt and pepper?
Christopher: No
Anders:
Well, I told you.
Christopher: I’ll fix, I’ll fix it right now.
Anders:
Anders:
Why not try the sauce.
This is really good. This is really good!
Christopher: I can feel it is not Swedish.
Anders:
No it is Indian.
Christopher: Yeah I know.
Anders:
This is not weak stuff.
You use your hands always when you eat Dosa. You never have a
fork or knife.
Christopher: It is strong.
Anders:
You are weak. You take like this dip it in the sauce like this. India
has the best food in the world; I just have to tell you.
Christopher: But yesterday you told me Italy was the best.
Anders:
Do you guys want some food?

Hasse:
Nej.
Hi my name is Hasse and I come from Tanzania, I am adopted from there.
Today I am going to make hot shrimps with my friend Fredrik over here.
Fredrik:
Hello.
Hasse:
What we need is shrimps…of course, parsley, garlic, chilli pepper, cooking
oil and olive oil,. What we are going to do first is to peel the shrimps. My
friend Fredrik is going to do it, and I’m going to chop the parsley into pieces,
small pieces.
I’m going to chop the garlic as well.
Hasse
Then we are going to have 1 dl of cooking and 1 dl of oil olive and this is
olive oil and this is cooking oil. Now I have said wrong this is cooking oil
and this is olive oil. So we need 1 dl of each of it.
(A Tip: To check if the oil is hot enough you can put down some parsley, if it fries
straight away it is hot enough to use.)
So I am going to put down some parsley into the oil and yes it is frying
straight away. So I am going to put down the garlic and the chilli pepper.
Fredrik:
I like hot food.
Hasse:
What food do you like hot?.
Fredrik:
Everything.
Hasse:
I like meat, hot meat, is good.
Fredrik;
Tanzanian food, I don’t know a lot about is it, but it is pretty strong right?
Hasse
Yeah there is a really good Chicken in Tanzania, it really tastes like…mmm. I
am going to put the seeds in the chilli now.
Hasse:
I think I’m going to add a little more spice, a little chilli peppers because I
want it strong this time.

Hasse:
Yeah, I think that it’s good with shrimps. Umm it tastes wonderful.
Fredrik:
Yeah it is really good with spice.
Hasse:
I think it is time for the shrimps to go down.
You do it like this.
Fredrik:
How long are they going to be in the oil.
Hasse:
it is going to be in about half a minute, because if they are in longer they get
very rubbery.
So when the shrimps are in the oil you can start with the bread.
I’m going to take the bread and cut it into small…pieces. Uh what do you
call it?
Fredrik:
Slices.
Hasse:
Slices. Just fry it in umm butter in a frying pan. You need a lot of butter.
Now we are going to put down the bread.
Fredrik:
You toast it don’t you?. That’s pretty good actually.
Hasse:
You can out down garlic if you want to get it with garlic taste. I’m going to
turn it over now like this.
Hasse:
Umm it smells really good this!
So Mattias come here and taste some.
Fredrik:
It’s kind of hot.
Hasse:
What do you think? Does it taste good?
Fredrik:
It was really good actually. It wasn’t so spicy
Hasse:
Ok, are you sure?
Fredrik:
Yeah spice is good.
Hasse:

Well you can eat it in Sweden but not when it is too cold.
To make gazpacho you need one red and one green pepper an
onion a lemon, a cucumber and lots of tomatoes.
You also need tomato juice, builon and olive oil.
The first thing that you do is cut across the bottom of the tomato and then you
put it in boiling water.
Then you cut them in some little pieces just like this and then put it
in the blender.
Alex:
This is the chief’s favourite thing to do.
Anders:
Yes I love it.
Alex:
Me too.
Alex:
Cut all the herbs into little pieces
Alex:

Max:
Hi my name is Max and this is my friend Richard.
Today we are going to make American pancakes.
I’m half-American so I really like American Pancakes.
So you need some dry ingredients and some eggs, some buttermilk
and some melted shortening.
Can you help me by cracking the eggs?
You should try not to get the shells in.
About half a litre of buttermilk in and a tablespoon of margarine. So
when you have mixed up that you pour the dry ingredients in.
At first it is going to look really bad. You just keep beating the mix
until it is smooth.
And it is ready to go.
Richard is doing a great job here.
Have you ever eaten American pancakes before Richard?
Richard:
Only when you have made it.
Max:
Ok, did you like them?
Richard:
Yeah.
Max:
Once I was in Thailand and at the hotel I stayed at they had
American pancakes with mango, and once I was in the US and I got
like M&M’s in my pancakes. So you can do a lot of things with
American pancakes.
Usually you eat them for breakfast.
Thank you.
Richard:
What?
1

Max:
I think I need a smaller one. Ok, because you need about 1dl in the
pan because these pancakes are really small compared to Swedish
pancakes.
You take about 1dl.
Melt some butter in a pan.
Richard, what are you doing?
Richard:
Eating.
Max:
Ok, yeah, umm. Like I said, you can put loads of stuff in American
pancakes and we thought we would use mango, dried mango and
some chocolate chips.
Richard can you chop that up please.
Richard:
Sure, it is really hard so it is good that I am doing it.
Max:
Yeah. So I pour about 1dl, you really want to get the middle done
before you get colour on the outside because otherwise you just get
soggy pancakes.
Richard you played American football didn’t you Richard.1
Richard:
Yeah. 2
Max:
You didn’t get hurt or anything.
Richard:
Well sometimes, you always get hurt in almost any sport.
I didn’t get hurt that much because, well, I am bigger than most
people.
Max:
Well I guess that is an advantage. Yeah. 3
The pancakes finished and I’ll just turn it over. Yep.
Richard can I have a plate please?
Richard:
Ok, since this is television.
