Welcome to the 2016 school year.
We hope that you have had a terrific start
to the school year and that this continues.
We are anticipating a huge and exciting
year ahead of us, including some great
workshops, our Patron Ben Milbourne of
Masterchef fame is ready to inspire you,
and the launch of our Canteen Cookbook
showcasing some of the great work that
our Canteen Managers are achieving in
their schools. We look forward to assisting
you and your school with your plans to
achieve a whole school approach to
healthy eating.
A TSCA 2016 membership form has been
circulated to schools at the beginning of
the year, so please look out for it and make
sure your school renews its membership or
becomes a member of the TSCA.
Membership enables us to support school
staff through workshops, newsletters,
resources and Canteen Awards. We love to
acknowledge the great work that schools
are doing to promote healthy eating.
Whilst all canteens are unique, we are all
doing the same job and wanting the same
outcome – Healthy Tassie Kids. There is
definitely a kindred spirit amongst canteen
staff, teachers, parents and the state
government in achieving this outcome.
So, keep up the great work this year and
always remember that the TSCA team are
here to support you in any way that we can
to achieve healthy food options.

2015 Canteen Awards
During December, 2015 the Canteen of the Year Awards were announced.
It is with great pleasure to announce the following Canteen Award winners:
Minister’s for Education’s Award – Best Whole School Approach to Healthy
Eating linked to the School Canteen awarded to Mowbray Heights Primary
School. Tanya Triffitt and her school have done a wonderful job in presenting
yummy, nutritious food for the children, through a variety of engaging ways.
Canteen Manager/Volunteer of the Year Award was awarded to Rob Morton
of Woodbridge District High School and Carol Hilyer of St Virgil’s Senior
College.
Two TSCA Commendable Effort Awards have been awarded to the following
Canteen Managers:
Lee Woolley – Huonville High School
Tanya Wood – Deloraine Primary School
All of the above awards were seen by the TSCA team and the judging panel to go
above and beyond the call of duty in providing foods and drinks that meet the
Canteen Accreditation criteria. This often meant that food was cooked at the
canteen with the use of local, fresh produce - extending children’s taste buds in
the appreciation of yummy food.
It is very special to be a recipient of such Awards, achieving the honour of being
the best in the business. We know there are a lot more of you out there doing
great things in your schools and we invite all schools to nominate their canteen
for Canteen Awards for 2016. Nomination forms will be circulated early Term 2,
with an announcement at the end of Term 3. There will be some great prizes
available. Look out for the forms and nominate your school canteen.

You may like to consider applying one or more of the
following ideas to your canteen during Harmony Week:
• Design a Harmony Week menu
• Invite the students to vote on their favourite cuisine
• Invite a guest cook to prepare their traditional cuisine
• Decorate with country flags during Harmony Week
Learning is a key step towards creating community
understanding and harmony.
Include a culturally diverse menu item such as:
• spaghetti
2016 marks the inaugural launch of state-wide Harmony Week
• mango lassie
celebrations. The Multicultural Council of Tasmania is working
• rice paper rolls
in partnership with the Tasmanian Government to coordinate
• fried rice
events and activities during the week of 14-21 March.

‘Our diversity is our strength’ is the national theme for this
year’s celebrations. Harmony Week is an ideal time to
encourage students to share their cultural differences and
create a more inclusive atmosphere.
There are countless ways schools can participate in Harmony
Week activities. One simple way is through the sharing of food
and stories.

What’s In Your Lunchbox project at Glenorchy Primary School
In Term 4, 2015 the ‘What’s In Your Lunchbox’ Project ran a
7 week ‘Boys Group’ for English as an Additional Language
(EAL) students at Glenorchy Primary School.
With the assistance of a Bicultural Worker the boys cooked
food from their country of origin that was suitable for their
lunchboxes. The spicy beans and salad wraps were a hit with
the boys and teachers. The group culminated with the boys
impressing their mothers and teachers by cooking and
serving them a meal of dahl, rice and salad.

Tassievore Challenge is happening again
during the month of March. There will be some great
school competitions. The theme for each week of March
are:
Week 1:Get Growing
Week 2: Ask for Local
Week 3: Find Your Food Story
Week 4: Share
We are asking Tassie Schools to take the challenge – it can
be as big or small of a commitment as suits your school.
Why not have the challenge run through the school
canteen? Cooking up a local produce dish would be lots of
fun and a great way to engage with your local community.
There is so much seasonal produce at the moment with vegies such
as; tomatoes (technically a fruit ), zucchinis’, chillies, corn, and fruits
such as nectarines, strawberries, plums, berries and peaches. Why
not make a zucchini slice or corn and zucchini fritters or a peach
cobbler or rustic plum tarts?
Resources such as a Local Food Directory and recipes have been
developed to assist schools in taking on the challenge. Visit

There will also be a great colouring in competition for the month of
Tassievore. This activity links the Veg It Up Campaign with the

Our Lady of Lourdes Catholic Primary School gets SILVER
Congratulations to Our Lady of Lourdes Catholic Primary School in
Devonport for gaining SILVER canteen accreditation. Canteen
Manager Shirley von Stieglitz and her assistant Linda Mulley have
done a great job in offering their school community a totally
delicious menu that changes each term.
Over the years, Shirley and Linda have tried lots of different
strategies to promote their canteen menu and increase sales and
we thought that some of them were worth sharing.
Almost all of the dishes on offer are made in the canteen using
fresh ingredients. Shirley and Linda have been quite innovative
and regularly give their dishes cool names – such as Mouse House
(cheese sandwich); Door Stopper (salad sandwich); Captain’s
Catch wrap (tuna & salad wrap); and Little Flockers Meal Deal
(shepherd’s pie, juice or water and apple spiral meal deal), which
really made a difference to their sales.
Linda thinks that the presentation of food and drinks are a very
important way to increase sales. For example, Linda brought in a
hot chocolate dispenser from home that didn’t work, she made
the hot chocolate and then transferred it to the dispenser to
serve to the students from – she could barely keep up with the
demand!
Shirley and Linda believe that offering free taste tests for new
menu items is a great way to encourage the children to try new
things. When they introduced the ‘not so attractive looking’ apple chips, the children were reluctant to buy them. After trying
free samples, the children loved them so much that they are now
a school favourite. We included the apple chip recipe in our Term
3, 2015 newsletter which is available from the TSCA website.
Persistence is something that Shirley and Linda feel is needed
when the healthy options on the menu don’t seem to be very
popular.

For example a salad box was added to the menu about 18
months ago, but the students weren’t interested. They
then tried again last term and it was really popular.
After 25 years as Canteen Manager, Shirley decided to
‘hang up her apron’ at the end of 2015. The team at the
TSCA would like to take this opportunity to wish Shirley all
the best for her retirement and to thank her for her support
over the years. Linda has taken on the role of Canteen
Manager – congratulations Linda!

Professional development opportunities - Term 1
Professional Development for Canteen Managers, Teachers
and School Business Managers. We have workshops happening
on the 16th March in Hobart and the 17th March in Launceston
(2 -4pm). These workshops will focus on the opportunities that
online canteen ordering can provide. There will be
presentations and school lead discussions from schools that
already have an online ordering system in place. Look out for
your invite.

The TSCA’s new website is now up and running. Visit our website
at www.tascanteenassn.org.au to obtain some great information
for your school on nutrition, recipes, allergies, etc. We are
currently developing a member’s only area. This area will have
additional nutrition and canteen information for member schools.
If you have any thoughts on what you as Canteen Manager would
like in this section we welcome your suggestions.

The heat is on …
As the heat is still with us in Term 1, kids seek something cool
from the canteen. It’s peak time for a range of mouthwatering summer fruits and they provide the perfect chance
to offer kids some icy sweet treats.
Try some of these GREEN ideas on your menu this summer.
Watermelon crush: puree seedless watermelon flesh in a
blender until smooth. Pour into small plastic cups and freeze
until firm. Serve with a spoon.
Frozen berry bites: puree fresh or frozen berries and reduced fat vanilla yoghurt in a blender until smooth. Spoon
into ice cube trays and freeze until firm. Sell individually or a
place a desired number in a small plastic cup with a spoon.
Melon wedges: serve chilled sliced watermelon, rockmelon
or honeydew melon with a serviette to catch the drips.
Strawberry and pineapple slushie: blend chunks of pineapple and chopped strawberries with 99% fruit juice (with no
added sugar) and lots of crushed ice.
Iced fruit snacks: freeze orange quarters, small bunches of
grapes, whole strawberries, melon or pineapple wedges.
Serve individually or as a selection with a serviette to catch the
drips.
Fruit smoothies: blend reduced fat milk, yoghurt and fruit of
your choice. Try soft fruit such as mango, berries, kiwi fruit or
banana.
Banana pops: peel a banana and chop in half and insert an
icy pole stick or cut banana into rounds and insert a toothpick
in each round. Freeze on a tray lined with baking paper until
firm.
Tropical fruit salad: chop summer fruits such as mango,
berries, melon, grapes and stone fruit. Serve in an ice cream
cone or in a plastic cup topped with reduced fat yoghurt and
muesli.
Banana mango smoothie pops: puree 1 banana, 200g
reduced fat mango yoghurt and 2 cups of reduced fat milk in a
blender until smooth. Pour into icy pole moulds and freeze
until firm. When ready to serve, run mould under some warm
water. Makes 6.
Remember if you are adding any commercial ice creams or icy
poles on your menu this term, check to see if they meet the
National Healthy School Canteen guidelines AMBER criteria:
