The recipe for this creation shows how easy it can be,
Frozen rhubarb is always in season and needs only a few m in

and rind are blended thoroughly; then add the egg yolks and
spices
Once the rhubarb is cooled, combine w ith the con

pie shell. .On top goes a cloud of m eringue and the pie is whisked

A BOTANIST WOULD TELL US THAT BROCCOLI is a flower,
but we like it best as a beautiful vegetable. From the Minute
Maid-Snow Crop Frozen Foods Test Kitchen come delicious ideas
for serving Frozen Broccoli Spears. Cook the broccoli according
to directions on the package; drizzle with melted butter and
sprinkle with lightly toasted silvered almonds or grated cheese.
It’s very good in a salad if you have any left over. Serve chilled
with your favorite dressing. One of our favorite main dish
recipes is Chicken Supreme with broccoli.
CHICKEN SUPREME
3 chicken breasts, halved
1 10-oz. package Snow Crop Broccoli Spears
Prepare Hollandaise Sauce ahead of time. Store away from
heat and tightly covered with aluminum foil until needed. Pan
try chicken breasts until golden and tender. Prepare Snow Crop
Broccoli Spears following package d irecti(^ and place in bot
tom of serving dish. Arrange chicken breasts overlapping on the
broccoli. Pour Hollandaise Sauce over chicken breasts and
brown under broiler a few minutes. Serve immediately. Serves 6.
•Recipe in many good cook books.
DID YOU KNOW: Hollandaise Sauce is less apt to curdle if made
in a bowl set in water rather than in a double boiler. Should
curbing occur, remove from hot water immediately and drop in a
«bbe of ice. Cool, remove ice, beat smooth and continue cooking.
For best results, when making Hollandaise Sauce, use a wire
whisk rather than a rotary beater. (ANS)
