Taking advantage of a package of quickfrozen rhubarb, sweetened condensed m ilk and pie crust m ix off the pantry shelf, you can whip up a delectable rhubarb m e ringue pie in jig time. The recipe for this creation shows how easy it can be, Frozen rhubarb is always in season and needs only a few m in utes cooking. The 15-ounce can of condensed milk, lemon juice and rind are blended thoroughly; then add the egg yolks and spices Once the rhubarb is cooled, combine w ith the con densed m ilk mixture. Presto! the filling is ready for the baked pie shell. .On top goes a cloud of m eringue and the pie is whisked into the oven for a brief bcpwning. RHUBARB MERINGUE PIE 1 9-inch pie shell, baked 1 teaspoon grated lemon rind and cooled U teaspoon cinnamon 1 package frozen rhubarb U teaspoon nutmeg IVt cups (1 15-oz. can) Eagle 2 egg yolks, slightly beaten Brand sweetened con* 2 egg w hites densed milk U teaspoon salt H cup lemon juice U cup sugar Cook rhubarb according to package directions. Drain welL CooL Blend sweetened condensed m ilk, lemon juice and rind until m ixture thickens. Add slightly beaten egg yolks, cinna* mon and nutmeg; m ix thoroughly Fold in rhubarb. Pour fliiing into shell. Beat egg w hites and salt until soft peaks ar* formed. Add sugar. 1 tablespoon at a time; continue to b « tt egg w hites until smooth and shiny. Cover filling w ith meringuai attaching w ell to shell edges to prevent shrinking Bake in a lc « oven (325* F.) about IS m inutes or until m eringue U U fhtly browned. Cool about 2 hours before serving. Cook the broccoli according to directions on the package; drizzle with melted butter and sprinkle with lightly toasted silvered almonds or grated cheese. It’s very good in a salad if you have any left over. Serve chilled with your favorite dressing. One of our favorite main dish recipes is Chicken Supreme with broccoli. CHICKEN SUPREME 3 chicken breasts, halved 1 10-oz. package Snow Crop Broccoli Spears Prepare Hollandaise Sauce ahead of time. Store away from heat and tightly covered with aluminum foil until needed. Pan try chicken breasts until golden and tender. Prepare Snow Crop Broccoli Spears following package d irecti(^ and place in bot tom of serving dish. Arrange chicken breasts overlapping on the broccoli. Pour Hollandaise Sauce over chicken breasts and brown under broiler a few minutes. Serve immediately. Serves 6. •Recipe in many good cook books. DID YOU KNOW: Hollandaise Sauce is less apt to curdle if made in a bowl set in water rather than in a double boiler. Should curbing occur, remove from hot water immediately and drop in a «bbe of ice. Cool, remove ice, beat smooth and continue cooking. For best results, when making Hollandaise Sauce, use a wire whisk rather than a rotary beater.
