1984 :
Launch of Martine Spécialités at Condat sur Trincou (Dordogne – FRANCE)
30 members of staff.
1992 :
1st extension in order to expand production of pastry baked goods.
1998 :
Martine Spécialités becomes a subsidiary of Sofrapain, which was itself, a
subsidiary of the British group RHM.
2001 :
A further extension: construction of a specialized pastry and sweat cream tart
workshop.
2006 :
The RHM group (holder of Sofrapain and therefore “Martine Spécialités”)
is bought out by Premier Foods.
March 2009 :
Martine Spécialités undergoes a leveraged buyout by its own management
which is backed up by 2 investment funds: Céréa and Azulis. The SME retrieves its
autonomy. 420 members of staff.
September 2010 :
Launch of a new tart production line: a 7 million Euro investment.

Quality requirements
Martine Spécialités guarantees its clients pastry based products worthy of the
best independent artisans.
In order to do so, production is founded on:
A meticulous selection of raw materials and ingredients.
Martine Specialités’ pastry based goods are made from top quality ingredients only: flour, butter, milk, fresh
eggs, and fruit (with carefully chosen origins, regions and varieties).
All our products are guaranteed “pure butter” and in the same way, the company banishes additives,
preservatives and artificial flavourings and colourings from its recipes.
What’s more, internally, Martine Spécialités has implemented a selection charter, guaranteeing that only the
best ingredients are used at optimized costs. In parallel, suppliers must comply with strict specifications as well
as with quality and standardized food security procedures.
Close attention is paid to food security and prevention measures
Security is one of Martine Spécialités’ main concerns.
The following points are kept under close scrutiny:
- Traceability
- Choice of activity chains
- Daily quality checks, related to consumer and staff security
- Supplier audits
- Tests (final product release accreditations and product recalls)

Martine Spécialités has been awarded grade A IFS and BRC certifications for its entire production site.
The company has also been granted accreditations by McDonald’s, M&S, Picard, Nestlé…

It’s for this reason that twice a year, Martine Spécialités offers its clients a brand new tart collection.
Collections which happily mix traditional pastry based references with innovative, trend inspiring products.

Since the company’s launch, Martine Spécialités has specialised in frozen, ready-to-cook pastry cases, targeting
retail and catering professionals. The product line has progressively been expanded.
Pastry cases
and tarts aimed at professionals
- pastry cases for enhanced creativity and saved time:
Puff and sweet pastry cases, custard filled cases, puff pastry slabs…
- snacks for on-the-go nibbles:
Apple turnovers, large pastry biscuits, shortbreads, scones…, an extensive list of sweet
treats that are fun to eat anytime, anywhere.
- galettes:
Since 1984, Martine Spécialités has been making a wide range of galettes in traditional
flavours like the frangipane galette, but also more innovative galettes such as
a braised caramelized apple version.
- sweat cream tarts:
The pastry and the smooth creamy custard have made this creation one of Martine
Spécialités’ star products. Based on its own expertise, Martine Spécialités has built up a
hot flavoured sweat cream tart range: Ghanaian chocolate sweat cream tarts, Caramel
with Flower of Guérande salt sweat cream tarts.
- frozen, ready-to-cook tarts, easy to stock and adapt to a wide
product line:
Almond tarts, Basque cakes, clafoutis, apricot tarts, apple tarts…
in different shapes and sizes.
- ready to be sold and defrosted baked tarts:
Chocolate tarts, lemon meringue tarts, clafoutis, strawberry tarts, normand tarts…
the range is declined in a variety of sweet pastry case tarts.
The tarts are made with the greatest of care in order to guarantee both attractive
presentation and excellent resistance after defrosting.
In order to satisfy the legitimate quality demands of its clients, the company
strives to respect traditional recipes, to guarantee the quality of the ingredients,
as well as to pay close attention to the aspect, taste and product resistance
after baking.
