BAKED APPLES APPLESAUCE

BAKED APPLES
Total Cook Time: 65 to 75 minutes
Ingredients
4 baking apples
4 tsp butter or margarine
Directions
1. Preheat oven to 350°F.
¼ cup brown sugar
2. Remove the core from apples. Score around the perimeter of the apples in
several locations to prevent the skin from rupturing during baking. Place the
apples in a baking dish with the blossom side down.
2 tsp of flour
3. In each cavity of the cored apple place 1 tsp of butter or margarine.
2 tbsp sugar
¼ tsp of cinnamon
2 tsp of water
4. Pour ½ tbsp of sugar on top of the butter in the cavity of the apples.
5. Bake for 50 to 60 minutes or until apples are tender when poked with a fork.
6. While they are baking, in a small bowl combine brown sugar, flour, cinnamon,
and water. Stir until well blended.
7. Once the apples are tender, pour the brown sugar mixture over the apples and
place back in the oven for 10 to 15 more minutes. Serve while still warm.

APPLESAUCE
Total Cook Time: 10-15 minutes

Directions
½ cup of cold water
1. Peal and cut apples in half then into quarters. Remove the core from the quarter
sections.
5-6 medium cooking apples
½ cup sugar
2. Cut quartered apples into thick slices. Place slices immediately in water with
lemon juice to prevent browning. Do not allow apples to soak for more than 15
minutes.
3. Add water to a heavy 2 quart saucepan. Drain slices and add them to the sauce
pan.
4. Bring apples and water to a boil over medium heat. Cover apples and reduce
heat to low. For chunky applesauce, simmer apples for 8-10 minutes for
smoother applesauce, simmer for 12-15 minutes.
5. Add sugar during the last 2 or 3 minutes of cooking time. Stir sugar into the
sauce and finish cooking to desired consistency. The applesauce can be served
warm or chilled. Before storing in the refrigerator, allow the applesauce to cool
and then place in a sealed container.
FRIED APPLES
Total Cook Time: 20 minutes

2 tbsp butter or margarine
1. Peal and cut apples in half and then into quarters. Remove the cores from each
of the quartered sections.
4 cooking apples
4 tbsp brown sugar
2. Cut the quartered sections into 3/8-inch to 1/2-inch thick slices. Place slices in
water with lemon juice to prevent browning. Do not allow apples to soak for
more than 15 minutes.
3. Melt butter or margarine in a large skillet until bubbling. While butter or
margarine is heating up, drain the apples and pat dry with paper towels before
adding the skillet.
4. Cook apples over medium heat for approximately 5 minutes or until tender
crisp and beginning to brown. Turn several times to brown evenly.
5. Add brown sugar and continue to cook until sugar has melted and started to
caramelize. Apple slices should be tender. Serve as a side dish while warm.

APPLE, GOAT CHEESE, AND PECAN PIZZA
Total Cook Time: 8 minutes
Ingredients
1 (1 lb) six-grain pizza crust
cooking spray
3 cups thinly sliced Fuji apples (about
8oz)
1 cup (4oz) crumbled goat or fetta
cheese
2 tsp chopped fresh thyme
1 tbsp extra-virgin olive oil
2 tsp Dijon mustard
1 tsp fresh lemon juice
1 ½ tsp honey
2 cups baby arugula
3 tbsp chopped pecans, toasted
Directions
1. Preheat oven to 450°F.
2. Place pizza crust on baking sheet coated with cooking spray. Arrange apple slices
evenly over pizza crust; top with cheese. Sprinkle thyme evenly over cheese. Bake
for 8 minutes or until cheese melts and begins to brown.
3. Combine oil and next 3 ingredients (through honey) in a medium bowl, stirring
with a whisk. Add arugula; toss gently to coat. Sprinkle pecans evenly over
pizza; top with arugula mixture. Cut pizza into 6 wedges.
FRESH APPLE SALSA
Total Time: 15-20 minutes

2 cups diced peeled Spartan apple
(about 3/4 lb)

1. Combine all ingredients, stirring well
1/2 cup diced red bell pepper
1/3 cup fresh lime juice
1/4 cup diced red onion
1/4 cup minced fresh cilantro
1 tbsp honey
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 jalapeno pepper, seeded and minced

APPLE MUFFINS
Total Cook Time: 20 to 25 minutes
Ingredients
cooking spray
1/4 cup chopped pecans
3/4 cup plus 2 tbsp packed brown sugar
1/2 tsp ground cinnamon
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 tsp baking soda
1/2 tsp fine salt
1/4 cup canola oil
2 large eggs
1 cup natural applesauce
1 tsp vanilla extract
3/4 cup low fat buttermilk
1 Golden Delicious apple peeled
cored and cut into 1/4-in pieces
Directions
1. Preheat oven to 400°F. Coat a 12-capacity standard muffin pan with cooking
spray or liners.
2. In a small bowl, mix together the pecans, 2 tbsp of brown sugar and the
cinnamon.
3. In a medium bowl, whisk together the all-purpose and whole wheat flour,
baking soda and salt.
4. In a large bowl, whisk the remaining 3/4 cup of brown sugar and the oil until
combined. Add the eggs, one at a time whisking well after each addition. Whisk
in the applesauce and vanilla.
5. Whisk in the flour mixture in two batches, alternating with the buttermilk.
Whisk just until combined. Gently stir in the apple chunks.
6. Pour the batter into the prepared muffin pan and sprinkle with pecan mixture.
Tap the pan on the counter a few times to remove any air bubbles. Bake until
wooden pick inserted in center of one of the muffins comes out clean, 20 to 25
minutes.
7. Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen
them and unmold. Cool completely on the rack.
