Observation: Observed accumulation of soil residue on bottom shelf of warmer by three compartment sink. Observed accumulation of debris at back of steamer. Corrective Action(s): Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. 3717-1-06.4(B) - Cleaning - frequency and restrictions. Observation: Observed a build-up of dirt and debris under food prep counter and under shelves in walk in freezer. Corrective Action(s): The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Comments: The following was observed during the inspection: Hot water, soap, and single-use paper towels were available at handwash sinks. Hair restraints and single-use gloves were in use. TCS food in hot holding >135°F. TCS food in cold holding <41°F. Metal stem probe thermometer was available. Sanitizer was adequate.
