A leafy green vegetable often used in Mediterranean cooking, Swiss chard has highly nutritious leaves. It is also known as silver beet, perpetual spinach, spinach beet, crab beet, seakale beet and bright lights. The leaves are green or reddish in colour, with the stalks having a variation of the most magnificent colours. Swiss chard and spinach are often confused. Interestingly enough, Swiss chard is actually part of the beet family and supplies leaves throughout the year.
