Bourbon County Stout | 13.8% | $18 | 8oz
Brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as
a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak,
chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer.
Bourbon County Vanilla Rye Stout | 13.8% | $18 | 8oz
First brewed for the legendary festival of Wood and Barrel Aged Beer in Chicago. This version
features a little twist of aging the stout in Rye Whiskey Barrels with a mix of Mexican and
Madagascar vanilla beans.
Bourbon County Barleywine | 12.1% | $18 | 8oz
Aged in second-use Kentucky bourbon barrels, this traditional English-style barleywine possesses the
subtlety of flavor that only comes from a barrel that’s gone through many seasons of ritual care.
Oak, charcoal, hints of tobacco and vanilla, and that signature bourbon heat.
Pepe Nero | 6.4% | $13 | 12oz
With an aroma of roasted chestnuts and a mysteriously dark, mahogany hue, Pepe Nero is a
farmhouse ale brewed with black peppercorns. His roasty sweetness melds into a lingering, earthy,
black pepper finish.
Juliet | 8.0% | $13 | 12oz
A rye beer aged in French oak (Robert Craig Cabernet Sauvignon) with blackberries and
Brettanomyces.
Madame Rose | 6.7% | $13 | 12oz
Brown Ale aged in French oak Cabernet Sauvignon barrels with the addition of Michigan cherries and
heavily inoculated with Brettanomyces.
Halia | 7.5% | $13 | 12oz
Halia is a farmhouse ale aged in wine barrels with whole peaches, resulting in bright, effervescent
fruit notes in a soft, hazy body that finishes slightly tart and sweet with the pleasant character of
ripe, juicy peaches. Literally meaning “remembrance of a loved one” in Hawaiian, Halia was brewed
in memory of the dear friend of one of our brewers who loved peaches.
Hombre Secreto | 9.0% | $13 | 12oz
Hombre Secreto is a saison that has been aged in Lunazul tequila barrels with Brettanomyces.

This year, Goose Island went on an origin trip to Costa Rica with Intelligentsia to choose Flecha Roja,
a roast that blends flavors of fruit and cherry, chocolate and nuttiness and a sublime aroma.

A unique blend of Bourbon County Brand Stout aged in rye whiskey barrels with blackberries,
Luxardo candied cherries, fresh sour cherries and sea salt.

This stout was aged for two years in the finest old barrels Goose Island used in its 18 years of
bourbon barrel-aging beers! A true rarity—savor and share it only with those you hold dear, as this
version will never be made again.
In 1992, Goose Island gave the beer industry a new reason to belly up to the bar: bourbon-aged beer.
We pioneered the process, and it begins with first-use bourbon barrels. Our brewers only choose
those that have had held sweet, sweet whiskey in their bellies for an average of 8 years, then they
age our beer inside for 8-12 months. This process takes place in a non-climate controlled space,
allowing exposure to the extreme heat and cold of Chicago’s ecosystem, which contracts and
expands the wood, pulling the barrel’s whiskey character into our brew. Each barrel is used only
once, ensuring the best quality taste in every pint.
That first barrel-aging process yielded our ever-tasty Bourbon County Stout back in 2004. Three years
later, we decided it was time to expand our barrel-aging program again. But this time our brewers
brought wine barrels into the picture.
They started with beer that had undergone primary fermentation in stainless steel casks, then
transferred it to wine barrels, soaked with flavor. Next came fresh fruit and wild yeasts, and the
beginning of a secondary fermentation inside the barrel. Aging went on for 9-18 months, creating
beer with unprecedented depth of character, increased acidity and a light essence of fruit without
too much sweetness. The variety of wine barrels we use now yield some of our most unique brews,
including Sofie, Juliet, Lolita, Madame Rose, Gillian and Halia.
In 2010, Rare Bourbon County Brand Stout, aged for two years in 23 year old Pappy Van Winkle
barrels was released on Black Friday – starting the tradition of lining up for Bourbon County that lives
on today.
