Take, for example, a Génoise!
To whip up a tasty Génoise sponge cake, prepare your workspace with the following:
200g of fresh egg*
125g of white sugar
Beat the eggs with
the sugar until they reach
the ribbon stage.
125g of flour
Incorporate the
pre-sifted flour.

1 sheet of baking paper
two 20 cm circular cake rings
On a baking sheet, pour into a cake ring.
Warning: fill the ring no more than half way.
The génoise will expand while baking.

* A 5-hour practical test de 5h + two 15-min oral tests. On the agenda:
questions on food science, recipes, hygiene, safety and materials
Example: What is the benfit of a grounded socket? Why is it important to wash your hands and how should it be done?
How is a génoise made? What role does salt play in pâte à brioche? The practical exam is weighted 11 times ?
* Two written tests (for the lucky ones who get this far)
- Prevention, health, environment: 1 hour wieghted 1 time.
- Supplies and stock management: 2 hours weighted 3 times.

Don't hesitate to knock on your local baker's door or at your favorite pastry shop. Offer your services.
You never know - they could need you to man the ovens or transport flour!
It's also an amazing way to learn the job, on the job ;)

Caroline, who oversees our ultra-fresh creations,
is putting the finishing touches on a new cookie
creation.
The ingredients? Oats, fresh butter, a pinch of
sugar, pumpkin seeds and cranberries.
