Message from the Director, Rose Swidan
Thank you to everyone that attended the Health Fair. It was very successful;
providing a lot of information to our residents. Special thanks to all the vendors that
supported our event, please see the complete list on the next page.
Come and join us for two different fundraisers this month. One is a special event—
our Paint ’n Pour Fundraiser will be held on October 15th. For the other, I will be
serving lunch at the Senior Center every Thursday and Friday. There will be a wide
variety of healthy and delicious meals, so please come join us.
All proceeds from the lunch sales and Paint ’n Pour will go to the “Friends of the
Senior Center”. Our goal for these fundraisers is to raise enough to build a full
service salon at our Senior Center. It is a much needed amenity that would be used
on a regular basis. If you are not able to make it to these events but still want to help, we appreciate
any donation you can offer to help build our salon. Checks can be made out to “Friends of the Senior
Center”. Thank you for your support.
Mark your calendar for our fun Halloween luncheon on October 21st at 11:00 a.m. We are having a
costume contest along with free gifts and raffles. Come and join the party!
We are having our Diabetic Education: Path to Better Health 6-week series on Thursdays starting
October 29th through December 10th from 11:30 a.m. to 2:00 p.m.
There is no cost for seniors so please sign up.
It is almost time for Medicare Enrollment! The Senior Alliance will be here on November 24th to help
figure out what plan works best for you and reduces your out-of-pocket costs. If you are feeling
overwhelmed by your medical bills, bring them and make an appointment to meet with their MMAP
counselors. They are certified to help and have great advice.
We have a great variety of events going on this month, please take the time and try something new!
Love & Prayers,
Rose

Recipe Exchange: Chicken Marsala Skillet
Ingredients
Directions
1/4 c. All-purpose flour
1/2 t. Dried thyme, crushed
1/4 t. Salt
1/8 t. Ground Black Pepper
4, 6-8oz. Skinless, boneless chicken breast
halves
1 c. Chicken broth
1/2 c. Dry marsala
3 T. Butter
1 T. Olive Oil
2 c. Sliced, fresh button or cremini
mushrooms
2 T. Finely chopped shallot (1 medium)
Hot cooked pasta (optional)
Snipped fresh Italian (flat-leaf) parsley
1. In a shallow dish, stir together flour, thyme,
salt and pepper; set aside. Place each
chicken breast half between two pieces of
plastic wrap. Using the flat side of a meat
mallet, pound chicken lightly until about 1/4
inch thick. Remove plastic wrap. Dip chicken
pieces into flour mixture, turning to coat.
2. In a small bowl, whisk together any remaining
flour mixture, the broth and Marsala; set
aside.
3. In an extra-large skillet, heat 1 T. of the butter
and the oil over medium-high heat. Add
chicken; cook for 4 to 6 minutes or until no
longer pink, turning once. Transfer chicken to
a serving platter; cover and keep warm.
4. For sauce, add mushrooms and shallot to
skillet; cook for 6 to 8 minutes or until tender,
stirring occasionally. Carefully add Marsala
mixture. Cook and stir until slightly thickened
and bubbly. Whisk in the remaining 2 T. butter
until incorporated. To serve, spoon sauce
over chicken and, if desired, pasta. Sprinkle
with parsley.
