It has always been our goal to balance the classic selection with something new and we are always there for our guests to encourage them and let them explore very fine wines hidden sometimes behind unknown labels. We have no doubts that you will find easily a bottle of wine that would go perfectly with our Head Chef’s Haute Cuisine at its best. We are longing for nothing else than to make you feel as happy as it has been described in Hemingway’s novel, and when suddenly you will start to make plans for the future please consider your imminent visit to Amberley Castle as one of them. We endeavour to keep our wine list as up to date as possible, although some vintages are subject to availability. For the very latest information please do not hesitate to contact our Restaurant Team. This water was drawn and sold from the Whitehole Springs since 1893 by Jack Horner and the Horner family. Local Celtic legends contain tales of water being the source of power and life and folklore suggests Whitehole Springs could possibly be the ‘lost’ healing springs of Avalon. 4 Italy San Pellegrino Sparkling Water 750ml Aqua Panna Still Water 750ml £ 7.00 It has been bottled for over 600 years at San Pellegrino Terme in the Province of Bergamo, Lombardy, Italy. Leonardo DaVinci is said to have examined San Pellegrino’s water in 1509. The springs are located at the foot of a Dolomite mountain wall, where the water seeps through limestone and volcanic rocks to depths of over 700 meters (1,300 ft). £ 7.00 Acqua Panna takes its name from the Villa Panna in the hills of Tuscany, where the natural spring was first discovered. In the 16th century the powerful ruling family of the Medici’s in Florence, owned the spring and it was fenced off as private property. Its source is located 3,700 feet high in the Apennine Mountains of Tuscany, to the north of Florence Norway VOSS Still and Sparkling Water 800ml £ 8.00 VOSS is bottled at an artesian source in the pristine wilderness of Vatnestrøm in Birkeland Southern Norway, naturally filtered and protected from pollutants. The water is generated and pumped from the artesian well deep beneath the ground. The unprocessed nature of the water gives it its fresh, clean taste. This occurrence is also key to the nature of VOSS, as availability of unfiltered water of this quality is rare. A maritime region, here in East Devon we enjoy a temperate climate and a long, warm growing season, affording the grapes exceptional depth and expression of character. The search for the right land for our vineyards took a while, but in 2010 we planted 26,000 vines and with hard work we were rewarded with an excellent first harvest in Autumn 2014. We are delighted to offer you our stunning range of one sparkling and five still English Wines for the first time. Founded by Nicolas Ruinart in the city of Reims the house is know as well as the first producer of bottled Champagne that could be transported to distant markets what made Champagne so famous all over the world. Ruinart taste is greatly dependent on the aging in chalk pits. It is 3 to 4 years for non-vintage Champagne and 9 to 10 years on average for a Dom Ruinart. The first delivery of Champagne went out in January, 1730 and since then Maison Ruinart has kept the standards of excellence of its founders. 10 The blend is made up of 40% Chardonnay, 57% Pinot Noir and 3% Pinot Meunier, 20 to 25% of which are wines reserved from the 2 previous years. The nose is delicate, fresh and fruity, filled with white-fleshed fruits (pears, Bosc apples), apricots as well as hazelnuts and fresh almonds. Several floral and spicy notes add an extra hint of complexity. R de Ruinart Bottle £ 105 Ruinart Brut Rosé, typically contains 45% of Chardonnay and 55% of Pinot Noir.
