SHIRE CHRISTMAS PARTY 2015
The 2015 Annual Shire of Upper Gascoyne
Christmas Party will be held on Friday
4th December 2015 at the g.j. pavilion,
commencing at 5.30 pm.
Prior to santa arriving the gascoyne junction
school presentation will take place.
All parents wishing for their children to receive
a present from santa. the shire will require
$25.00 per child to cover the cost of the
present.
We are asking families if you could please bring
along a plate of food to share to assist with the
catering. If you are planning on coming along to
the function please contact Genevieve on

QUIZ NIGHT
The CRC working group held the annual Quiz Night on
Saturday 29th August. Unfortunately it was only attended by about 30 people, which was a disappointment, but
those that attended had a great fun night. The Burrowing
Bees took away the first prize for the night, with other
groups winning individual prizes. We are looking at
changing the date for this event next year as it coincides
with mustering.

Camp Hosts
National Park Volunteers are based at the Mt
Augustus Tourist Park from April to October
and are happy to provide visitors with
information on the wild flowers as well as
walks, great views, where the aboriginal
etchings are and where the most recent
reptile sightings have been.
Children who climb to the Summit
(accompanied by an adult) are presented a
personalised certificate commemorating their
achievement. The youngest child to attain
one last year was 7 years of age and the
oldest person to conquer the Mount was in his
early 80’s.
If you haven’t seen the spectacular big rock in
your “back yard yet” or if it has been a while
since the last time, this year would be a great
time to do so.

Spring Recipes
Spring
vegetable
lasagne
Ingredients














30g butter
1/4 cup plain flour
1/2 cups milk
1 bunch asparagus, trimmed, thickly sliced
2 zucchini, cut into ribbons
2 green onions, trimmed, cut into 8cm lengths
1 bunch English spinach, trimmed
10 dried instant lasagne sheets
1 cup frozen peas
250g fresh ricotta
2 roma tomatoes, thinly sliced
2/3 cup chopped fresh basil leaves
1 cup grated pizza cheese
Extra basil leaves, to serve
Method
Preheat oven to 200°C/180°C fan-forced.
Melt butter in small saucepan over medium heat. Add flour. Cook, stirring, for 1
minute or until bubbling. Remove from heat. Gradually stir in milk until combined.
Return to heat. Cook, stirring constantly, 3 minutes or until sauce boils and thickens.
Remove from heat. Season with salt and pepper.
Bring a medium saucepan of salted water to the boil. Add asparagus, zucchini and
onion. Boil for 2 minutes. Remove with slotted spoon. Drain on paper towel. Add
spinach to pan. Cook for 1 minute or until wilted. Remove with slotted spoon.
Squeeze out excess moisture when cool enough to handle. Roughly chop.
Cover the base of a 20cm x 28cm (8 cup- capacity) ovenproof dish with 2/3 cup white
sauce. Layer 1/4 lasagne sheets trimming to fit. Layer asparagus mixture, peas and
1/3 ricotta. Top with 1/3 of remaining lasagne sheets, 1/2 spinach, and 1/2
remaining ricotta. Repeat. Top with remaining lasagne sheets and remaining white
sauce. Arrange tomato and basil leaves on top. Sprinkle with cheese.
Bake for 45 minutes or until golden and pasta is tender. Serve with extra basil leaves.

Ingredients






185g unsalted butter, melted
1/4 cup (25g) good-quality cocoa, sifted
1 cup (220g) caster sugar
2 eggs
1 cup (150g) plain flour, sifted
50g dark chocolate, melted, cooled
Mint topping
 1/3 cup (75g) caster sugar
 1 bunch mint, leaves picked
 250g cream cheese
 3 eggs
 1/2 teaspoon peppermint extract (see note)
 100ml thickened cream

2-3 drops green food colouring
Method
Preheat the oven to 160°C and grease and line a 20cm square loose-bottomed
cake pan with baking paper.
Place butter, cocoa, sugar, eggs and flour in a bowl and mix well to combine. Press
firmly into the prepared pan and bake for 15 minutes or until set. Allow to cool
completely.
Meanwhile, for the mint topping, place sugar, mint and 1/2 cup (125ml) water in a
saucepan over low heat and stir until the sugar dissolves. Increase heat to medium
and simmer for 3 minutes, then set aside to cool completely. Strain the sugar syrup
into a jug, discarding the solids. Place the cream cheese in a food processor and
whiz for a few seconds to soften. Add cooled sugar syrup, eggs, peppermint extract, cream and food colouring and process until smooth.
Pour the cheesecake mixture into cake pan then tightly wrap the base of the pan
with foil to make it watertight. Place the cheesecake in a deep baking dish and fill
with enough boiling water to come halfway up the sides of the cake pan. Bake for
25 minutes or until topping is just set – the cake may have a slight wobble but it
will firm on cooling. Remove from the oven and cool completely, then chill for 2
hours or until firm.
Cut cheesecake into slices, drizzle over the cooled melted chocolate and serve
