Ingredients:
Eggs (2 per serving)
Meat (2 pieces per serving) Choices:
Canadian bacon, salmon, sausage, livermush, country ham, crab cake, prosciutto…
or you may use one of these fruits or fresh
vegetable: tomato, onion, spinach, pineapple slice. We call this the “Base”.
Cheese (shredded or finely grated) choices
Include Six Italian blend; Swiss, Cheddar,
Feta, or whatever ever you like that grates
Heavy Cream
English Muffins or Dry Toast
Preparation:
Pre-heat oven to 425 degrees
Use a non-stick cooking spray to lightly coat
the inside of an oblong ramekin baking dish
sized to hold two pieces of the base sideby-side which you place in the dish.
Make a “nest” of the grated or shredded
cheese of your choice to pair with the Base
with a dividing edge of cheese across the
narrow middle line of the dish, making 2
nests.
Crack one egg into each nest and cover it
with heavy cream (less than 1/4).
Bake 10 minutes @ 425 degrees.
Top with grated Parmesan cheese and
bake for 5 more minutes or until egg whites
are firm.
Serve on toasted English muffin.

Ingredients: (The good way)
3-4 Pears (halved and cored, not peeled)
1/2 cup plain yogurt (no fat)
1/8—1/4 cup heavy cream
3-4 Tbs light brown sugar
3-4 Tbs curry powder*
Preparation:
Preheat oven to 350 degrees
Wash and dry pears as above
Combine yogurt, cream, sugar, curry powder and turmeric. Immerse the pears in the
mixture. Place in baking dish and Bake 30
minutes or until tender.

3-4 Tbs butter
3-4 Tbs dark brown sugar
3-4 Tbs curry powder (1 per fruit)*
1/4 tsp salt
Preparation: (The other way)
Preheat oven to 350 degrees
Wash and dry pears as above
Combine butter, sugar, curry powder and
salt. Divide this combination into 6-8 equal
parts, putting one portion into the cavity of
each pear half. Bake 30 minutes.
*Adjust amount of curry to your taste.

Ingredients:
10-12 Eggs with yolk
1/2 cup skim milk
1 tsp turmeric
1 tsp salt
1 Tomato diced
3 Bell Peppers assorted colors chopped
1 Large Onion diced
1 bag fresh baby Spinach
1 cup fresh chopped Cilantro
3 Cloves Garlic chopped
1/2 cup mild cheddar cheese (low fat)
1/2 cup feta cheese crumbles (low fat)
Preparation:
In a bowl, whisk eggs and milk with turmeric
and salt.
In a large frying pan that is oven safe (cast
iron skillet if you have one) start to cook the
eggs over low heat, then add the vegetables and garlic.
In an pre-heated oven at 350 degrees for
20 minutes, then add cheeses and cook for
additional 5 minutes. Remove and serve
hot.
Note: One of the keys to the flavor and texture
of this pie is the fresh vegetables that are NOT
sautéed before adding to the eggs. The crispness of their texture adds to the eating experience. Many cooks are accustomed to sautéing
the vegetables before adding eggs for an omelet, but resist that habit for this recipe. If you
don’t like it our way, you can go back to your
way the next time you cook this.
Ingredients:
2 medium Sweet Potatoes diced
1 apple diced
1 medium onion chopped
1 tsp curry powder
1 tsp cumin powder
1 clove garlic chopped
1/2 tsp turmeric
2 Tbs Olive Oil
Preparation:
Heat oil in medium to large skillet.
In a bowl, combine diced potatoes and apple, chopped onion turmeric, cumin and
curry. Toss to coat the vegetables and fruit
with the spices. Add them to the skillet and
sauté over medium heat until brown, then
on low heat until soft. Salt to taste.
Serves 6-8. Increase the recipe for a crowd

Ingredients:
8 oz fresh cranberries
6 Clementine oranges peeled & sectioned
1 stick cinnamon
2 cardamom seeds (optional)
4 cloves
1 bay leaf
1 Tbs shredded ginger root
1 cup sugar
4 cups water
1/2 tsp orange zest
1/2 cup golden raisins
Preparation:
In a sauce pan, combine sugar, water, cinnamon, cloves, bay leaf and bring to a boil.
Add cranberries and oranges and cook on
slow simmer until thickened. Add zest and
allow to cool before serving.
