Module #4: The Carbohydrates Nutrients (Sugars, Starches, and Dietary
Fiber)
GOAL: To have students learn about the occurrence of carbohydrates in foods and how they are needed
and used by the body to support good health.
A. Learning Objectives After completing this UNIT, students will be able to:
1. Discuss the origin of carbohydrates and the recycling of carbon and oxygen in the ecosystem.
2. Distinguish between the terms simple carbohydrates and complex carbohydrates.
3. Name, characterize, and identify major food sources of each type of carbohydrate nutrient.
4. Distinguish between condensation and hydrolysis reactions for carbohydrates.
5. Briefly describe the digestion and absorption of the different types of carbohydrates; identify
important organs and enzymes and their functions in the process.
6. Discuss the causes and management of lactose intolerance and hyperglycemia.
7. Describe the homeostasis of blood glucose. Discuss roles of the hormones (insulin, glucagon, and
epinephrine).
8. Discuss glycemic index.
9. Compare/contrast characteristics of the major types of diabetes mellitus.
10. Identify functions of the carbohydrates that are present in the body (glucose and glycogen).
11. Discuss health effects of dietary carbohydrates (simple sugars, and complex carbohydrates).
12. Identify specific health effects of soluble and insoluble fibers.
13. State the nutrient intake recommendations for various types of carbohydrates (sugars, starches, &
fiber).
14. Identify commonly used sugar substitutes.
15. Be able to calculate your daily recommendation for fiber intake.
16. List 10 ways to increase your daily fiber intake.

C. Assignments:
1. Notes: Using Chapter 4 of our nutrition textbook, read and work your way through the chapter and
type a response to each learning objective (see above). Keep this in your notebook and use for studying
for Test 1 and the Final exam. The test questions will come from these objectives.
2. Discussion forum : Complete the Module 4-Discussion assignment under discussions
3. Practice Quizzes: Use the textbook website to complete the multiple choice quiz for Chapter 4 (repeat
as needed). Do NOT email results to me. This activity is for self-assessment and PRACTICE only.
4. M4-Quiz (After you have completed all other assignments in Module 4, and complete the Module-4
quiz (from Modules in Canvas).
5. Post your topic for your Research Paper for approval
