MEET THE CHEFS IN UPPER CANADA VILLAGE’S THIRD ANNUAL

CHEF CHRISTIAN BARQUE

Chef Christian Barque graduated from the Culinary Program at
Cambrian College in Sudbury, and apprenticed in Ontario and
Quebec under the prestigious Institut de l’Hotellerie du Quebec.
He earned his Red Seal certification and spent three years as an
instructor at IOHAHIO College in Akwesasne. He opened his first
restaurant Fusion Grill at the age of 22. He worked at the infamous
Willow Restaurant in Hudson before opening Knox Fine Dining in Moose Creek. He was Executive
Chef for La Cuisine Volante in Alfred. Today, Chef Barque runs “Two Guys with Taste” food
consultants along with his very popular Bar Q Resto & Lounge in Cornwall, where he brings his
culinary magic to a seasonal menu that showcases traditional meats and unique flavours.

Farm Girl Food
Kingston Ontario
Tamara Bolger is a Chef, Mother, Wife, proud Kingstonian and
Accidental Farmer.
In 2011 she moved with her family from downtown Toronto to a 10
acre farm in Kingston Ontario. After tilling the soil that had not been
farmed in decades, she became extremely passionate about
growing her own food for her family and exploring the local farms
and producers in the area. She quickly was nicknamed ‘Farm Girl’
by her downtown Toronto friends, and soon opened Kingston’s first
Gourmet Food Truck, focusing on farm to table fare that was
healthy and delicious. Farm Girl then expanded to a Catering
Company and a Country Bistro located 1 km from her Farm where
she continues to be inspired by what is grown on her land and from local farmers. What started as a
leap of faith to move with her family and start a new life has turned into a career as both farmer and
Chef, with a passion for serving food that is local, seasonal, comfort home cooking.
CHEF STEVE HARRIS

Chef Steve Harris has had a passion for cooking for as long as he
can remember. Some of his earliest memories are of him cooking
with his grandmother in her Nova Scotia kitchen. That passion
grew throughout the years and continues to flourish at his
restaurant two six {ate} which he opened just over 3 years ago
with his life and business partner Emily Ienzi. There, Chef Harris
focuses on nose to tail cooking, using local, sustainable farming,
and making everything from scratch. With the restaurant being in the heart of Little Italy in Ottawa,
Chef Harris is happy to embrace the neighbourhood and culture by incorporating Italian gastronomy
and spirits into his creations. He constantly challenges himself to be a better chef by trying new
curing, preserving, and cooking techniques regularly.
CHEF WAYNE JOHNSON

Akwesasne Mohawk Territory
Chef Wayne Johnson is turtle clan from the Akwesasne Mohawk
Territory, who has a great eye for detail and is a disciplined chef. He
grew up on the Island of Oahu, Hawaii, where he and his father
cruised the North Shore beaches chasing sea turtles, waves, and
local grinds. The love of the outdoors and fresh ocean cuisines made
pastimes like fishing and cooking Chef Wayne’s passion. As a
graduate from Paul Smiths College with an associate’s degree in Culinary Arts, he was praised by his
professors from day one. With a recommendation from Professor Gotzmer, he ventured to many
different areas in the trade. As a student intern at the Akwesasne Mohawk Casino and Resort he
was soon ushered from a buffet line to the gourmet kitchen of the Maple Room restaurant. Chef
Wayne is now determined to reach new heights in his catering business. He is a humble individual
that often can be a self-proclaimed perfectionist in his artistic abilities on the chef line.
