Is Batter Up Pancakes a franchise?
Not at this point in time.
Do you have any other locations?
Not currently. After opening our flagship Batter
Up on the Figarden Loop in 2007, we closed that
location in September 2012. We would love to
expand the concept in the Southern California
area, near our children and three grandchildren.
Where did the idea originate?
Becci had a prophetic dream outlining the gist of
the business plan while in Tucson, Arizona, at
Michael’s U of A baseball series.
Why baseball terms and proper names?
We love baseball. Our son is in the minor
leagues, playing for the Tampa Bay Rays
organization. Proper names are those of family
members, dear friends and loved ones.
Who is the face of the logo?
Our grandson, Benson, who was eighteenmonths old when the original logo was created.
Our granddaughter, Nicolla, is featured on a new
line of dry rubs and we will be creating a future
product line featuring our newest granddaughter,
Tessa.
How accurate is the time estimate given by the
hostess on a busy weekend?
Only a best-guess estimate and not an exact.
Why do the pancakes taste homemade?
Our pancakes are made from rich buttermilk, real
eggs, pure vanilla extract and butter. They rise
on the grill slowly, much like a cake in the oven.
The average time for a pancake to cook once
placed on the grill is six to seven minutes.
How much buttermilk do you use in a given
week?
We use approximately 580 half gallons of
buttermilk monthly.
Where does the dry pancake mix come from?
Our dry-pancake mix is Jeff’s secret recipe. We
make approximately 500 pounds of mix weekly,
utilizing our friendly 80-quart Hobart mixer. We
now sell cans of our mix, both original buttermilk
and whole grain, in the restaurant and online.
What makes the omelets taste so light and
flavorful?
The omelets are made from AA eggs that we
hand crack. We use approximately 4,000 eggs
per week. All the veggies are fresh and many are
sautéed separately, then added into the omelet.

Q Why is Pure Maple Syrup so expensive?
A On average, it takes 40 gallons of maple sap to
make one gallon of Pure Maple Syrup. A hole is
drilled into each maple tree which yields 10
gallons of sap in an average year. Four maple
trees, ranging in age from 40 to 200 years, are
needed to make one gallon of Pure Maple Syrup.
That is why it so expensive (think pure liquid gold)
and why we must charge an additional cost to our
customers. If you have treated yourself to some
Pure Maple Syrup today, may we suggest pouring
a small amount onto your plate and dipping your
pancakes into the syrup as a condiment.
Q Is everyone who works here a family member?
A Not biologically, but we like to treat each
employee as if they were part of our family. They
are selectively hired and all are an integral part of
our team.
Q What type of coffee do you serve?
A We are proud to serve coffee from Equator
Coffees & Teas. A women-owned green business
founded in 1995 in San Rafael, California, Equator
Coffees & Teas is a specialty coffee roaster, tea
purveyor and coffee farm owner. Equator sources
and grows boutique-grade Estate, Organic, Fair
Trade and Rainforest Alliance Certified coffees
around the globe. Over the years, Equator has
built a vast network of suppliers rooted in quality

Q Do you cater breakfast and lunch?
A Absolutely. Please ask for one of our catering
menus.

retail area?
A Absolutely. As an example: Take a jar of our
Batter Up Pancakes dry pancake mix, a jar of
locally-made preserves and a small bottle of Pure
Maple syrup; we’ll arrange this cute little trio and
cello wrap it for you while you wait.
Q Are you in any way affiliated with Great Harvest
Bread Co.?
A No. After owning it for 8.5 years, we sold it in 2011
to focus our attention exclusively on Batter Up
Pancakes.
