Three Amigos Chili
This recipe was developed by three very courageous people at Nesco! Adjust your "heat
level" by altering the amount of jalapeño pepper, cayenne pepper, and chili powder.
Ingredients:
2 lbs. ground chuck
2 lbs. beef stew meat, cut in bite-sized pieces
1 tsp. salt
2 large onions, chopped
1 tsp. pepper
4 Tbsp. garlic, chopped
Remaining Ingredients:
1 green pepper, chopped
1 red pepper, chopped
1 yellow pepper, chopped
32-oz. can whole tomatoes, cut
1 fresh jalapeño pepper, chopped
2 15-oz. cans hot chili beans
64-oz. can V-8 vegetable juice
4 15-oz. cans tomato herb sauce
16-oz. jar thick & chunky salsa
4 Tbsp. chili powder
2 Tbsp. cayenne pepper
1 Tbsp. ground cumin
1 Tbsp. brown sugar
Directions:
Preheat 12-qt. Nesco roaster oven to 400ºF. Sauté seasoned meat, garlic, and onions with cover on. Stir
to brown evenly.
Pour off any grease and add remaining ingredients. Turn heat to 250ºF and simmer 1 – 3 hours (the
longer the better).
Garnish with finely shredded cheddar cheese and chopped onion. Serve and enjoy! Serves 24.
Delicious Pumpkin Pie
Ingredients:
8-oz. package of cream cheese, softened
2 cups canned pumpkin, mashed
1 cup sugar
1/4 tsp. salt
1 egg
2 egg yolks, slightly beaten
1 cup half and half
1/4 cup butter, melted
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger (optional)
1 pre-made pie dough
1 can whipped cream (for topping)
Directions:
Preheat Nesco roaster oven to 350ºF.
Place pie dough in 9-inch pie pan and press down along the bottom and all sides. Pinch and crimp edges
together to make a patterned edge. Put pie shell/pan in freezer for 1 hour to firm up.
Remove from freezer and cover shell with foil. Bake for 10 minutes. Then remove foil and bake for
another 10 minutes, or until crust begins to brown.
For the filling, beat cream cheese in a large mixing bowl until smooth. Add pumpkin and beat until
blended.
Stir in sugar and salt and mix until combined with pumpkin mixture. Add egg mixture, half-and-half, and
butter. Add vanilla, cinnamon, and ginger. Mix well.
Pour filling into warm pie crust. Place pie on rack in cook well inside roaster. Put cover on roaster and
bake for 50 minutes, or until the center is set.
Remove and cool on rack. Cut into slices and top with a generous amount of whipped cream. Serves 8.
