There might still be a little bit of a chill in the air but spring is just around the corner. The nights are

When Emperor Wu Ti of the Han Dynasty conquered the Southern capital of
Canton (Guangdong), he was introduced to the juicy, flavorful "laichi" fruit. He
loved it so much that he ordered 500 trees to be planted, but they all died in the
frigid northern temperatures. He tried it again with similar results. He then
remedied his taste for the fruits by demanding them to be paid as tribute. Later,
mature trees were transported and carefully tended for a successful crop.
Peas and Broad Beans Salad
700g podded broad beans
500g podded peas
50g butter
1 bunch spring onions
4 tbsp chicken stock or water
1 handful mint leaves
Heat half the butter and fry onions until
soft. Add beans and stir. Add stock or
water, bring to the boil, cover and cook
for 5 mins. Add peas and seasoning and
cook for 5 mins until tender. Stir in mint
and remaining butter.

English Chalke Valley Watercress
10 miles west of Salisbury Broadchalke is
one of several small villages that form the
beautiful Chalke Valley. Many changes and
improvements have been made to the site
over the last 120 years. The famous
watercress grows in the same way as before
to maintain its uniqueness.

I say Kumato!!!
Kumatoes are unique in both color and taste. Unlike
normal tomatoes, Kumatoes can be eaten at any color
stage, with each stage given a different taste and
texture. They range in appearance from rich brown to
deep red. Kumatoes taste is distinctly intense, crisp
taste which relies on contrasting sweet and sour notes.

Jersey Mids & Wares are just starting to hit the
market. They are the first of the new season so they
are not cheap but the taste and price will improve as
the season progress.
We will see the first of English Asparagus very
soon. Be aware that it will still be expensive at first!

ate winter and early spring is a
lean time. As soon as shoots start to
appear, however, there are some
tender, young spring greens to
gather. They grow quickly too – the
early spring plants race to grow before
the trees produce leaves and cut out
much of the light to the forest floor.
Wild garlic grows
across the UK from
late winter until the
end of spring. The
leaves can be eaten
raw or cooked and taste milder than
shop-bought garlic.

beautiful,
natural
salty flavor which,
when picked young
makes an excellent addition to salads
and seafood dishes.

and, unfortunately,
often easily felt as
the whole plant is
