If you're a bride or groom who's been researching caterers and food service options, you likely already know that an intermezzo is a 'refresher course' that can be served to help cleanse a diner's palate before another course. Often in the form of a sorbet scoop — lemon, lime, orange, berry... yet even more choices for you to contemplate! — it's a nice change of pace for guests. But if intermezzos aren't your thing, don't fret. These days, wedding menus run the gamut from backyard barbecues to pig roasts to traditional plated service to buffet. When you're researching your caterer and food options, ask lots of questions. Even if you're going with a venue where you have to use the in-house caterer, be sure to interview them. You need to be comfortable with the person preparing your meal — ask for references, referrals and for a sample tasting. You can arrange all manner of food stations these days, including a cocktail hour with different stations set up throughout a venue, passed hors d'oeuvres, or even a brunch or tea. Talk to your caterer about what your goal is with your meal: are you trying to move people along quickly or do you prefer a leisurely tea and brunch with less food and more time for talking? Do you prefer to have every element plated and served at a set time, or are food stations throughout the night more your style? As with any element of your wedding, being sure to state what you want — and keeping the lines of communication open with your caterer — is key to a great meal.
