Farmers’ Market PANCAKES
3 cups flour
3 Tbsp granulated sugar
1 ½ tsp salt
1 ½ tsp baking soda
1 ½ Tbsp baking powder
3 cups buttermilk
3 eggs
3 Tbsp vegetable oil
1. In a large bowl, combine the flour, sugar, salt, baking soda and baking
powder.
2. In a separate bowl, whisk together the buttermilk, eggs and oil. Make a well
in the dry ingredients and pour in the buttermilk mixture. Stir until just
combined
3. Cook on lightly-greased griddle or non-stick frying pan over medium heat.
4. Makes approximately 20 three-inch pancakes.
5. Serves six.
