Paul Triglau has represented Australia in baking
and pastry on two occasions at the Sigep World
Baking Cup. On both occasions Australia finished
third and in 2010 they won the best showpiece.
In 2011 Australia claimed first place in the bread
category. He is very well versed in all the latest
trends in baking and is extremely passionate about
his role as an educator, encouraging students to

Creating Tapas Delights at

Get ready for summer entertaining with Basque
pintxos. This is demo only class with assistance
from the audience. You will gain the skills and
be involved in tasks such as croquetta with
chorizo and celery leaf on sauce romesco,
stuffed Spanish olives with escabeche mussels
and manchego, tuna mayonnaise with jamon
on croute, baked crotin of goat cheese
with KI honey, thyme and garlic, potato and
caramelised onion tortilla, sauteed prawns,

Beer Flavours and Styles
Mash Brewing
Micro Brewing
This course, consisting of four evening
sessions, is aimed at those wanting a detailed
knowledge of beer styles, flavours, faults and
evaluation. Participants will gain theoretical
flavour knowledge and vocabulary, as well as
exposure to beers of diverse styles, good, bad
and spiked with specific compounds for the
benefit of training their own palates.
The course is designed for those interested in
the process of making beer through mashing
the grain such as home brewers or beer
enthusiasts.
Delivered at TAFE SA’s Regency Campus
state-of-art in-house brewery, this course will
provide you with hands-on intensive training in
producing great commercial craft beer. Stephen
Nelsen our renown qualified and experienced
brewer and accredited trainer, will present
a thorough tutorial series along with guest
lecturers from the industry who will deliver
enlightening presentations on specialty subjects
from barley, malting, yeast, microbiology,
laboratory skills to packaging and excise.
