La ciudad de Lyon -Patrimonio Mundial de la Humanidad- ha reconfirmado su estatus, no menos
conocido, de Patrimonio Gastronómico. Lo hizo a través de su nueva edición de SIRHA, la feria que
convoca a todo el mundo de la hotelería, restauración y oficios gastronómicos. En un marco excep-

cional, la presencia de profesionales de todas las áreas de las industrias de restauración, hostelería

y servicios de alimentos, no sólo de Francia sino también del exterior, fue una de las claves del éxito
de este encuentro.
Cuando decimos “a todo el mundo” tomamos la palabra en
su dimensión real. El primer impacto de “todo el mundo”
yendo a SIRHA lo percibimos en la gran congestión de la
ruta que lleva de la ciudad de Lyon al centro de exposiciones. Claro que la larga marcha valía la pena, ya que al llegar nos aguardaba una feria impactante, rica en novedades, concursos, demostraciones y sorpresas. No es por
nada que, del 24 al 28 de enero, 189.028 profesionales
visitaron la feria donde se presentaban productos de 3045
expositores en una superficie de 130.000 m2. Más de
25.000 visitantes provenían de 135 países. Es que ningún
profesional gastronómico quería faltar a este encuentro
con el futuro, ya que Sirha no es sólo una muestra de productos y equipamientos, sino un escenario con infinidad
de podios, como el Food Studio, la exposición
Streetonomie “Danger de Mordre” (peligro de mordida),
Sixième Sens Scènes de Tables (sexto sentido escenas de
mesa), el World Cuisine Summit (Cumbre Mundial de la
Cocina), la International Catering Cup (Copa Internacional
del Catering), la Copa del Mundo de la Pastelería, el
Bocuse d’Or, los Grandes Premios SIRHA a la Innovación, el
Espacio Innovaciones y Novedades, entre otros numerosos
eventos y concursos
