La ciudad de Lyon -Patrimonio Mundial de la Humanidad- ha reconfirmado su estatus, no menos conocido, de Patrimonio Gastronómico. Lo hizo a través de su nueva edición de SIRHA, la feria que convoca a todo el mundo de la hotelería, restauración y oficios gastronómicos. En un marco excep- 2 cional, la presencia de profesionales de todas las áreas de las industrias de restauración, hostelería new products booklets y servicios de alimentos, no sólo de Francia sino también del exterior, fue una de las claves del éxito de este encuentro. Cuando decimos “a todo el mundo” tomamos la palabra en su dimensión real.
