Prepare pizza dough and pizza sauce according to separate recipes. Pizza sauce, prepared (see separate recipe) 5 cup 10 cup 2. Rinse bell peppers, tomotoes, and parsley under cool running water. Trim and dice bell pepeprs, trim and slice tomatoes, and chop parsley. Peppers, bell, green, fresh 1/2 lb AP 1 lb AP 3. Flatten dough and place on pizza screen. Peppers, bell, red, fresh 1/2 lb AP 1 lb AP 4. Place 1 cup (8 oz ladle) sauce on each pizza dough, spread evenly leaving 1/2 inch area on outer crust. Parsley, chopped, fresh 1/4 cup 1/2 cup 5. Evenly distribute shredded cheese on pizzas. Tomatoes, red, whole, fresh 1 lb AP 2 lb AP 6. Evenly distribute bell peppers and tomatoes over pizzas. Cheese, mozzarella, shredded 4 lb 12 oz 9 lb 8 oz 7. Place in 400°F preheated pizza oven for approximately 7 minutes. 8. Garnish with parsley and cut into 10 slices. 9. Place on sheet pan or in pizza box. Hot hold at 141°F or higher until service. CCP: Hold for hot service at 141°F.
