Apple Day Recipes
Warm Apple Cheese Melts
Ingredients
Serves 12
½ package cheddar cheese
¼ tsp ground cinnamon
1 small apple, cut into thin slices
24 whole grain crackers
Directions
Heat oven to 350°F. Cut cheese into 12 slices; cut each slice crosswise in half. Mix sugar and
cinnamon in small bowl. Add apples; toss to coat. Place crackers on baking sheet. Top with
cheese and apples. Bake 3 min. or until cheese is melted.

Apple Sandwiches
Ingredients
1 tablespoon rolled oats
1/8 teaspoon ground cinnamon
3 tablespoons peanut butter (if allowed in KES Club)
3 tablespoons of vanilla Greek yogurt (if peanut butter not
allowed)
1 tablespoon raisins
1 medium apple
Directions
Combine the oats and cinnamon in a dry skillet over medium heat and toast, stirring
occasionally, until the oats are golden. Cool before using. Core and slice the apple into
6 rounds. (If you don't have an apple corer, you can slice the apple first and then cut out
the centers with a small cookie cutter or knife.) Spread 1 tablespoon of the peanut
butter or the yogurt (which ever you are using) on 3 of the apple slices and sprinkle with
raisins and oats. Top with the remaining apple slices to form sandwiches. Recipe adapted

Apple and Cheese Tortilla
Ingredients
1 whole grain tortilla (6 inch diameter)
4 tbsp cheddar cheese, grated
1/3 thinly sliced or cut up apples
Directions
Place the tortilla on a plate and sprinkle 2 tbsp cheddar cheese on 1 half of the tortilla.
Place the apple pieces over the cheese. Then sprinkle 2 tbsp cheese over the apple
pieces. Fold the tortilla over the filling. Microwave on high, for about 1 minute. Cut the
tortilla in half or thirds and serve.

Apple Oatmeal
Ingredients
½ cup whole rolled oats
1 cup water
½ a medium sized apple, diced
1 tablespoon brown sugar
½ cup 2% milk
½ teaspoon ground cinnamon
2 tablespoons granola
Directions
Bring water to a boil in a saucepan. Add the oats and cook covered on medium-low heat
for about 5-8 minutes, or until all the water is absorbed. Heat a second small saucepan
on medium-low heat. Add apples and brown sugar and heat until the apples are
softened, stirring continuously. Add apple mixture to oatmeal. Stir in the milk and
cinnamon. Place oatmeal into a bowl and top with granola.

Baked Apple Slices
Ingredients
1 large apple, unpeeled and washed
1 teaspoon ground cinnamon
Directions
Heat oven to 400 degrees F. Line a large baking sheet with parchment paper. Remove
the core and slice the apple. Sprinkle both sides of the apple slices with cinnamon.
Place on the baking sheet. Bake 10 minutes on each side or until golden-brown and
tender.
