Carrot Chocolate Muffins
Chocolate Carrot Cake Muffins

Ingredients:
1 ½ cups finely grated carrots
¾ cup sugar
½ cup all-purpose flour
½ cup whole wheat flour
½ tsp. baking soda
2 eggs
½ cup + 1 TBSP cooking oil
¼ cup cocoa powder
¼ tsp. salt
Directions:
Grate the carrots on a box grater.
In a large bowl, beat the carrots, sugar, oil and eggs until well blended. (Wet)
Combine the flour, cocoa, baking soda and salt. (Dry)
Add the dry ingredients to the wet ingredients.
Line a muffin pan with paper cups. Fill muffin cups ½ full.
Bake at 350°F/170°C for 10-12 minutes.

Ingredients:
¾ cup sugar
½ cup butter
½ cup plain yogurt
1 tsp. baking soda
1 egg
1 tsp vanilla
2 2/3 cup flour
½ tsp. salt
Directions:
Cream sugar and butter. Mix in the egg, vanilla and yogurt with the sugar and
butter. Combine dry ingredients (flour, salt, baking soda). Add dry ingredients
to wet ingredients. Chill the cookie dough in the refrigerator for 1 hour. Sprinkle
flour on your counter then roll out half the dough about 1 cm thick. Use cookie
cutters to cut out desired shapes.
Bake at 425°F/220°C for 7 minutes.

Ingredients:
Mixed Vegetables of your choice
1 small onion
¼ cup Orzo Pasta
½ tsp Salt
1 cube Kallo Organic Vegetable Stock
Directions:
Wash vegetables. Peel vegetables as needed.
Chop into bite size pieces.
Put into cooking pot cover with water. Add vegetable stock cube and cook for
20 minutes. Add Orzo pasta and cook for 10 minutes.
Mini Pizzas

Ingredients:
Mini Arabic Bread (Pitas)
Jar of Pizza sauce
Mozzarella Cheese
Directions:
Grate the cheese or buy pre-grated cheese.
Spread the sauce on the mini pita round.
Sprinkle Cheese on top.

Bake at 350°F/170°C until the cheese browns.

Rainbow Fruit Kabobs

Ingredients:
Rainbow colored fruits of your choice.
Kabob Skewers
Directions:
Wash the fruit
Peel fruits that need peeling.
Cut fruit into bite sized pieces.
Choose fruits you like and stick them on a kabob skewer. Try to make
a rainbow or fruit pattern.
Apple Sauce

5 peeled and sliced apples (mix of sweet & tart apples)
¼ cup sugar (or less)
¼ cup water
1 cinnamon stick
Peel, core and slice the apples. Then chop them into smaller bits.
Place apples into a medium sized pot. Add the water, sugar and
cinnamon stick.
Cook on a med-low heat for 15-20 minutes, stirring frequently until the
apples are tender and brown.
Cheese Crackers (Gold Fish Cracker homemade alternative)

Ingredients:
2 cups grated cheddar cheese (8 ounces) I used Cracker Barrel Sharp
¼ cup unsalted butter (room temperature)
¼ tsp. salt
1 cup flour
2 Tbsp. ice water
Directions:
Blend the cheese, butter and salt until combined.
Add the flour and mix until it forms pea sized balls.
Slowly add the water until the dough forms one large ball.
Pat the dough into a circle on a floured surface. Then roll it out to ½ cm
thick. Use a rolling pastry cutter (fluted or straight edge) to cut the
crackers into 3cm squares. Pierce each cracker with a fork.
Bake at 375°F/190°C for 15 minutes or until golden brown.

Granola Bars

Ingredients:
¼ cup honey
¼ cup butter
1/3 cup brown
1/3 cup chocolate chips
2 cups oatmeal
1 cup rice cereal
¼ cup ground flax seed
Directions:
In a large bowl, stir oats and rice cereal together. Set aside.
In a small pot, melt the honey, butter and brown sugar in a small pot
over medium high heat until it comes to a bubble. When the mixture
begins to boil, reduce heat and simmer for two minutes. Pour over the
dry ingredients and mix well. Portion into small muffin cup, top with 4
or 5 chocolate chips and gently press together. Allow to cool then
serve.

Ingredients:
2 ¼ cups Flour
1 tsp. Baking Soda
1 tsp. Salt
2 cups Chocolate chips
1 cup Butter (room temperature)
¾ cup brown sugar
¾ cup sugar
1 tsp vanilla
2 eggs
Directions:
Combine flour, baking soda and salt in a small bowl and set aside.
Mix, butter, brown sugar, sugar, vanilla and eggs. Gradually add the
flour mixture to the sugar and butter. Then add the chocolate chips.
Place table spoon drops on a cookie sheet and bake at 375°F/190°C
for 9-11 minutes or until golden brown.

Ingredients:
¼ cup water
½ cup cornstarch
Food Coloring (optional)
Directions:
Measure the cornstarch in a small bowl. Slowly add the water while
mixing. Keep adding more water until the mixture becomes this (and
hardens when you tap on it). ** Add more cornstarch if it becomes to
runny.
Add food coloring to desired color.
Oobleck is a “non-Newtonian” substance and acts as both a liquid and
a solid. It’s a great sensory exploration. Add pressure and it behaves
as a solid. No pressure it acts as a liquid.
Pasta Salad Buffet

Ingredients:
Cooked pasta of your choice
Chopped Vegetables
Cheese
Olive Oil and Vinegar (Optional)
Cilantro (Optional)
Parmesan Cheese (Optional)
Directions:
Cook pasta according to instructions.
Wash and chop vegetables. Mix pasta and vegetables.
Top with cheese, cilantro, oil and vinegar to taste.
Pretzels

Ingredients:
1 ½ cups warm water
1 Tbsp. Sugar
3 ¾ - 4 cups Flour
1 Tbsp. Yeast
1 tsp. Salt
¼ cup Milk
Directions:
Pour warm water into a large sealable bag. Add yeast and shake.
Add sugar and salt. Shake and let it set.
Measure flour and half the flour to the bag and seal the bag. Next, knead the
mixture in the bag. Add the rest of the flour and knead again. Then turn the
bag inside out and remove the dough from the bag, putting it on a floured
counter. Knead the dough for three minutes until it is soft and smooth.
Cut dough into portions and form into desired shape. We made pretzels. First
roll a snake, then make the number 6 and finally fold the top of the 6 down to
the bottom. Let the pretzels rest for 10 minutes.
Brush the pretzels with milk and bake at 425F for 12-15 minutes. Turn
the oven to Broil for the last 5 minutes to brown the tops.

Directions:
Choose cream cheese or yogurt and spread on the rice cake.
Use fruits and/or vegetables to make a design on the rice cake.
