Our menu contains simple but traditional dishes and I only use personally selected ingredients, including those from the Valencia region in Spain which are sourced by my friend Antonio. However, the story goes that on his travels through Spain, His sherry was served with a slice of ham covering the top of the glass which served both as an appetiser and a way of keeping the dust out. Tapas means cover in Spanish and the legend has it that after Alfonso’s visit the custom of serving small appetisers with drinks became widespread. chef in Budapest, I realised the international appeal of the before getting the chance to convert the old Mash Tun pub in Winchester into our own version of a Spanish-style tapas bar and restaurant. We called it El Sabio. Our wish was to fuse together the Spanish ideas with both authentic Spanish ingredients and lots of locally-sourced meat, proved very popular in Winchester and led to us opening a second ‘El Sabio’ in Newbury.
