I would like to take this opportunity to thank you for
visiting us so that I can share my passion for Spanish
food. I have over 20 years experience as a chef. Our menu
contains simple but traditional dishes and I only use
personally selected ingredients, including those from the
Valencia region in Spain which are sourced by my friend
Antonio.
I very much hope you will enjoy your meal at El Sabio,

The story behind
El Sabio
El Sabio means ‘the Wise One’ and was the title given to an
of his studious nature and his work both in music and literature
than the fact that he was wise enough to see the potential of
tapas. However, the story goes that on his travels through Spain,

restaurant. We called it El Sabio.
Our wish was to fuse together the Spanish ideas with both
authentic Spanish ingredients and lots of locally-sourced meat,
proved very popular in Winchester and led to us opening a
second ‘El Sabio’ in Newbury.
