Low calorie desserts
G ood food for waist-watchers
Virtue, they say, is its own reward. But if you've
been dieting—some call it starving—you may need a
small splurge, every now and then, to lift your spirits.
In fact, some psychologists point out that an
occasional treat relieves the monotony of a
weight-loss regime—and helps keep you on the
straight-’n’-narrow the rest of the week!
What better way to be nice to yourself than with a
chocolate dessert? While too much of anything can
add pounds, sampled judiciously this trio of
tempting recipes shouldn't wreak havoc with your
diet plan. Each is easy to prepare using versatile
Hershey’s Cocoa. (Cocoa gives a highly concentrat­
ed chocolate flavor that’s especially satisfying when
you're counting calories. It’s very easy to work with,
too—just mix it in right from the can, with no
pre-melting as for baking chocolate.) And since
cocoa has most of the cocoa butter removed, it’s
much lower in fat than baking chocolate—another
plus for dieters!
Use the blender to whip up Dieter’s Chocolate
Cheesecake. The base is that popular diet standby,
cottage cheese. Choose the low-fat variety to further
economize on calories.
Chock-full of dates, nuts and cereal, Cocoa
Porcupines are simple to put together. Just combine
ingredients and roll into balls. They make great
snacks for the kids, too!
Chocolate Gelatine Dessert will delight even
non-dieters. You may want to serve with a choice of
fruit or ladyfingers—for the skinnies. Although
elegantly light, the taste is rich. Cocoa blends tn
smoothly, helping to insure delicate texture.
Pour V.« cup milk into blender container. Add
gelatine; allow to soften while assembling
ingredients. Heat two-thirds cup milk to boiling
point; pour into blender and process till gelatine
dissolves. Add egg yolks, cocoa, V* cup sugar and
vanilla; process at medium speed till well blended.
Add cottage cheese; blend at high speed till smooth.
Pour into bowl; chill till mixture mounds from a
spoon. Beat egg whites till frothy; gradually add 2
tablespoons sugar and beat till stiff peaks form. Fold
into chocolate mixture. Combine graham cracker
crumbs and cinnamon; sprinkle onto bottom of an
8-inch round cake pan (removable bottom

preferred). Pour chocolate mixture into pan; chill
several hours or overnight. Arrange fruit on top;
garnish with additional graham cracker crumbs, if
desired.

WAIST-WATCHER’S COCOA GELATINE
DESSERT
(4 to 5 servings)
1 envelope (1 tablespoon) unflavored gelatine
Vi cup cold water
tw o -th ird s cu p n o n -fat d ry m ilk p o w d e r
2 cups water
2 egg yolks, slightly beaten
3 tablespoons Hershey’s Cocoa
'A teaspoon salt
lA cup sugar or equivalent amount of non-caloric
sweetener
2 teaspoons vanilla
Sprinkle gelatine onto 'A cup cold water; set
aside. Combine milk powder and 2 cups water in
medium saucepan; blend in egg yolks, cocoa and
salt. Cook over medium heat, stirring constantly, till
mixture just begins to boil; remove from heat. Stir in
gelatine, sugar or sweetener and vanilla. Pour into
individual dessert dishes or 3-cup mold. Place plastic
wrap gently on surface; chill till firm. Garnish
individual dessert dishes with fresh or naturally
sweetened canned fruit or unmold dessert onto
serving tray; serve slices with fruit or ladyfingers.
COCOA PORCUPINES
(About 36 balls)
2 eggs, slightly beaten
V* cup sugar or sugar substitute
'/« cup Hershey’s Cocoa
1 cup finely chopped pitted dates
'A cup finely chopped nuts
2 cups toasted rice cereal
1 cup flaked coconut
Combine eggs, sugar and cocoa in saucepan; add
dates. Cook over medium heat, stirring constantly
for 10 minutes or till mixture almost toils. Cool 5
minutes; stir in nuts and cereal. Cool 10 minutes
longen Drop by teaspoonfuls into coconut; roll into
balk/
DIETER’S CHOCOLATE CHEESECAKE
(8 servings)
V* cup skim milk
1 envelope unflavored gelatine
two-thirds cup skim milk
2 egg yolks
3 tablespoons Hershey’s Cocoa
V* cup sugar or sugar substitute
VA teaspoons vanilla
2 egg whites
2 tablespoons sugar
cue-third cup Honey Maid Graham Cracker crumbs
Vs teaspoon cinnamon
1'A cups (12 oz. carton) mild creamed cottage
cheese
Fresh or naturallysweetened,canned fruit
