Message from the President
Don’t get us wrong: we are summer people. (Hellooo, Stout’s Island Lodge
and University Club pool/deck!) But count us on the list of people who still
get really excited about fall. Maybe that’s because we keep ourselves so
busy with incredible fall-themed events and programming. Or maybe it’s
because there’s still plenty of time for grilling and outdoor activities but
now we get to blend in harvest dinners and Oktoberfest and…mmm…we
can just smell the crisp, fall, soon-to-be-mosquito-free air.
Here is more about what you have to look forward to over the next couple
of months:
• Labor Day Corn Roast. Still clinging to summer? We have you
covered. Join us to send the season out in style with our Labor Day
Corn Roast and BBQ. It’s from 1:00 to 4:00 p.m. on September 5th.
Please call the front desk of the U Club to RSVP.
• Oktoberfest. A beloved themed member night, not to be missed.
Raise a glass with us—it’s the best (at least the best combination of
“fun” and “civilized”) party outside of Munich.
• Harvest Dinner. You’re what turns one of our dinners into a celebration, so we can’t do it without you. Join us for sumptuous fall-themed
food on Thursday, September 22nd at the U Club.
• Volunteer Event at Ronald McDonald House. This extraordinary
opportunity gives members a chance to celebrate the birthdays of
residents at the Ronald McDonald house.
• Griggs’ Mansion Haunted Halloween. This annual event is always a
hit. Join us for some spooky, elegant fun!
And of course, we’re looking forward to the start of fall programming at the
Club. We have the indoor swim team, beginning ballet, and a host of other
options for every member of the family. The end of summer doesn’t seem
so bad after all.

As front of house manager, Jillian
Pfeifer is one of the “faces” of
the University Club. She’s a recent
addition to the team but has taken
to her role like a true veteran. At
any given moment, Jillian can be
found running events, managing
service, connecting with members,
or simply making sure that everyone
is eating, drinking, and being merry.

Jillian holds a degree in hotel,
restaurant, and tourism management, and she’s also a Level
1 Sommelier through the Court of Master Sommeliers. In
order to become a Level 1 Sommelier, you have to take an
intensive course and pass a tough exam, so she really knows
her stuff when it comes to wine. She’s aiming to continue her
sommelier education, so feel free to help her practice her
craft by asking for a good recommendation.
Though Jillian is new to the Twin Cities, she says that staff
and members alike at the University Club have been
very welcoming, and she is really enjoying her time here.
Fortunately for her (and for us), meeting new people and
creating relationships is one of her specialties.
When she’s not helping a guest pick between a Grenache
and a Gewürztraminer, Jillian spends her time reading,
spending time with friends, or drinking wine. She has two
sisters and a cat named Tybalt.

MEMBER SPOTLIGHT
What started as an anti-video-game crusade has led
to an eight-year love affair
between Rob Hahn and the
University Club. “My sons
Bobby and Patrick were
young, and I needed to find
them a healthy alternative to
video games,” says Rob, explaining why the Club’s pool
served as the primary draw
when he initially joined.
The Winona native says the
history of the Club was a
compelling reason to join,
too—but let’s be honest; the young boys weren’t going to
be dragged away from their electronics just for a bit of
history. The pool, however, did the trick.
We caught up with Rob to find out more about how the
Club has fit into their lives over the past eight years.
UC: Okay, so we know the pool brought you here, but
it can’t be the only reason you stayed for the past eight
years. We hope you’ve found some things for you here—
not just your boys?
RH: Yes; I do enjoy the pool and working out, and, most
recently, yoga. I also love the Fireside Room for reading,
working, dreaming, and conversation.
UC: We’re biased, of course, but the Fireside Room is hard
to beat.
RH: It’s incredible how many of the world’s great prob-
lems a few of us can solve during short discussions in that
room. Truly amazing!
UC: Couldn’t agree more. Do you attend any of the Club
events or ever stop over at SPAC?
RH: Absolutely. My favorite is the Friday night happy hour
at the University Club, and I do occasionally use SPAC as
well.
UC: And when you’re not exercising, at happy hour, or
solving the world’s problems, what might we find you
doing?
RH: I loathe boredom, so I keep busy. I’m a small business owner. One business focuses on communication
strategies and media outreach. I also just completed my
first documentary film, “Hi, Gene! Meet the Real Senator
McCarthy,” which chronicles the history and improbable
1968 presidential campaign of former Minnesota Senator
Eugene McCarthy.
UC: Sounds fascinating. Perhaps you could host a screening at the Club? And before we go, is there anything else
on your bucket list?
RH: A Cubs’ pennant, and serenity now!
UC: Okay, we can get on board with the latter, but we will
not go against our hometown team in print. Maybe we
can leave that debate to the Fireside Room!
“Hi, Gene! Meet the Real Senator McCarthy” will be
screened at the University Club on Tuesday evening,
October 11th in the Summit Room. We hope you can join
us! The screening is free and open to the public.

CHARITY SPOTLIGHT
Charity Spotlight is a monthly initiative we’ve
developed to further give back to important
causes in our community. Each month, we feature a
different non-profit partner to help raise awareness
and funds for an array of incredible organizations.
We feature a special restaurant menu every month,
and a portion of the sales from this menu will be
donated directly to the spotlight organization. In
addition, our Youth Service Team will be working
on projects directly affiliated with each non-profit
during each monthly meeting.

LAST MONTH AT THE CLUBS
Last month at the Clubs saw the culmination of a great Camp U Club season, a
camping trip to Stout’s Island Lodge, and
a trip to CHS field to watch the Saint Paul
Saints. Camp U Club shined at the Art
and Talent Show, the Beachbody Fitness
Jam at SPAC was a huge success, and the
croquet team continued a very fun season
at Overlook Park.

happening with our members. This month, we’d like to congratulate U
Club member Dawn Morningstar, who just completed writing her second
book, Venerable Women: Transform Ourselves, Transform the World. Dawn
is a transformational speaker and the founder of Venerable Women--an
organization, a philosophy, and a movement that supports women who choose to
manifest a kind and loving world. Great work, Dawn!

In an effort to better serve you, we are revising Happy
Hour effective September 1st. Happy Hour specials will
be offered from 3:00pm-6:00pm Sunday – Thursday,
and will include $4 beer, wine, and cocktails, as well as

WINE CLUB by Cory Biladeau
Fall is right around the corner, but it’s not here yet! If you’re
looking for a great way to squeeze out the last flavors of the
season, plan a wine tasting! If hosting a wine tasting sounds
a bit intimidating, it doesn’t have to be. Information on your
favorite wines can be easily found on the internet - from key
flavor notes to pinpoint during each sip to the best food
pairings for each type of wine – and a wine tasting does not
need to be formal. Another great resource for information:
your local wine shop.
The Wine Club is, essentially, a monthly wine tasting group.
The Wine Club learns and tastes together, and the education we’ve received during each monthly meeting has
proven to be useful, memorable, and enlightening.
Brad Ballinger presented during August’s meeting, when
he highlighted crisp, Italian white wines. Wine is a special
hobby of Brad’s, and his passion was evident during his
presentation. Brad educated us on the designations made
by Italian law for wine making, such as DOGC, DOC and IGT.
The designations control quality and what grapes can be
used (who knew?).
Fun fact: Prosecco is a grape; it isn’t just a champagne-like
wine, and Prosecco does not have to be “fizzy.” Another fun
fact: “secco” means dry.
We started the evening with a lovely Prosecco: the 2014
Bisson Glera Vino Frizzante, Marcia Trevigiana IGT. We then
tasted Giovanna Madonia “Neblina” Albana Secco, Romagna DOCG, a fruity but dry white wine.
The wines that followed were all very different yet all still
crisp and dry. Of note was Alois Lageder “Haberle” Pinot Bianco DOC, which is a white wine spends time aging in oak.
One of the most interesting offerings of the evening was
Monastero Suore Cistercensi Coenobium “Ruscum” IGT,
which is an “orange” wine. He wrapped us up with Saracco
Moscato d’Asti DOCG, which had a nice, sweet finish.
As always, the Wine Club continues to taste and explore
together, and looks forward to continuing on into the fall
months. All of age members are welcome and encouraged
to join!

Pre-and Beginning Ballet
Ages 5 – 10 years – reservations required
Our Beginning Classical Ballet series is taught by Georgia
Finnegan-Saulitis, who has trained and taught extensively
in both North America and Europe. Ms. Finnegan-Saulitis
will guide students through the fundamentals of ballet, and
introduce dancers to the art, technique and joy of classical
dance. Two sessions will be offered this year for two
different age groups:
Pre-ballet (ages 5 and 6)

Etiquette Class is Back!

We are thrilled to offer another etiquette class to our
younger members. We partner with Bethany Miller
from Doors of Success Etiquette to provide a valuable and fun, social and dining skills workshop. Class
includes a multi-course lunch and a manners party bag,
and topics include the following:

• Key table manners
• Introductions
• Restaurant Manners
• Thank you notes and more

ABOUT GEORGIA FINNIGAN-SAULITIS
Georgia Finnegan-Saulitis is the current director and co-founder
of Rivers Ballet, whose mission is to advance artistic collaboration, classical training, and dance as a sacred art form. Georgia
comes with nearly 30 years in the nonprofit world, specifically in
arts, culture, and education. She has taught ballet for 24 years;
has produced 30 ballet productions; and choreographed over
100 works. Georgia, founder of Saint Paul City Ballet (renamed
St. Paul Ballet in 2014), continued its growth and development
for 16 years, garnering foundation and corporate support. She
was awarded the Changemaker Award in 2005 from the Twin
Cities Business Journal. Georgia has founded two ballet outreach
programs in Saint Paul that are still active: In 2005 in the North
End of Saint Paul, and in 2009 at the Landmark Center. Georgia
has also been active in the business community (for example,
president of the Grand Avenue Business Association) and a firm
believer that the arts, in partnership with corporate and business
support, augment the economy of cities and increases the vitality
and aesthetic beauty of its community.

Ages 5 and older (must be able to swim one length
of the pool) – reservations required
Join us at the SPAC pool for a memorable evening of
aquatic cinema. Ticket price is one or more canned
goods, which will be donated to a local food shelf.
Noodles and pool floats are encouraged!
Fall and winter can be swim season, too – just take
a look at SPAC’s 8th floor pool! Year-round swim
programs are a great opportunity for your child to
maintain and develop their stroke, build endurance
and stay active during the cooler months. Several
sessions are available:

Great Books Discussions
This month, the Great Books Discussions group will discuss two short works dealing with the theme
of Equality: “Equality, Value and Merit” by Friedrich Hayek, and “Liberalism” by Ronald Dworkin.
These two essays examine the notion of equality from the perspectives of two writers who
fundamentally differ in their understanding of political and economic equality.
These essays appear in the anthology Counterparts, published by the Great Books Foundation.

Investment Club (ICLUB) by Eugene Mason
The ICLUB meeting agenda is generally constructed to
provide time for discussions focusing on the investment
portfolio and resolutions to take actions relating to the
acquisition or disposition of securities.
A resolution was passed instructing the Treasurer to sell
Whole Foods (WFM). This security was purchased in
January of 2015 at $50.82 per share. Market price at the
time of this meeting was $30.28. At the time of purchase, it
was reasoned that WFM earnings would improve following
the change in the company’s business plan to open smaller
stores and lower the prices; we had high expectations
for our investment. Evidently, their strategy did not work,
and the introduction of the new store format intensified
competition in the market, and big box stores like Target
and Walmart that offer natural and organic food options
are now seen as a new competitor. Reports of mispricing
and unsanitary conditions in some markets has also led
to the decrease in stock price. As discussed in a previous
article, a prime portfolio strategy is knowing when to “hold”
an investment and knowing when to “fold” an investment.
The lesson learned with regard to WFM is that a decision
should have been made much earlier to sell the holding.
Another topic of discussion at the August meeting were
recommendations not requiring a resolution. The I CLUB
will continue to hold Cummins and ISHARES CONSUMER
STAPLES (XLP). Cummins is showing promises and XLP is a
good producer (gaining 15% annually).
No other actions were taken to add new purchases to the
portfolio or to trim other holdings.
Discussions regarding the Watch List, specifically Tesla and
TJ Maxx, were optimistic. Tesla is having some difficulties
with its auto drive and TJX is showing signs that there is
still life in the retail market - specifically the retail discount
market. Guests are always welcome at investment club meetings
and are encouraged to participate in discussions. Meetings are scheduled on the second Wednesday of each
month. Meetings start at 5:30pm and adjourn at 7:00pm. If

Wellness Corner
WATER
Water is essential for life. Your body is about 70%
water, and requires it for digestion, circulation,
respiration, heat regulation, brain function and
excretion. Water helps boost your metabolism,
reduce your hunger, increase energy levels and
boost mental awareness. Many times, it isn’t the
afternoon nap your body needs, it is water that
will help drive off the feeling of sleepiness and
lethargy. Waiting until you are thirsty to drink
means that you are already 1-2% dehydrated,
which is significant. Dehydration, which occurs
when the body has insufficient water and other
fluids to function properly, can lead to blood clots,
seizures, and other potentially fatal complications.
Staying hydrated throughout the day is a major
key to overall health – and it’s easy!
Tips for staying hydrated:
• Drink 8 ounces of water when you wake up
(our favorite: drink warm water with lemon,
which helps to balance the pH in your blood)
• Sip some decaffeinated or herbal tea for your
morning beverage if you’re not a fan of water
(but stay away from caffeine, which can cause
greater dehydration)
• Keep a water bottle with you throughout the
day (you’ll find you’ll absent-mindedly drink
water throughout the day as a result)
• Use fresh or frozen fruit in your water for
added natural flavor: strawberries, lemons,
watermelon and even cucumber make a
refreshing and tasty drink (and add important
electrolytes, which are essential to your body)
• Sip on water during meal times: not only will
it help hydrate you, but it will help slow you
down as you eat, and you may find you eat
less!
• Eat more fresh fruits and vegetables, they have
more water content (and electrolytes)
• Set an alarm on to go off at the top of every
hour and drink 8 ounces each time it rings.
By the end of an eight-hour you will have
consumed 64 ounces of water (about 2 liters)
How to Check If You’re Dehydrated
Try this skin test: use two fingers to grab a roll
of skin on the back of your hand, pull the
skin up about ½ to one centimeter high and
then let the skin go. The skin should spring
back to its normal position in less than a
couple of seconds. If it takes longer than
5-10 seconds, you may be dehydrated.
Check your urine. If your water intake is what
it should be, your urine will be mostly clear
with a tinge of yellow, similar to lemonade.
Yellow, chardonnay, and orange are the
“warning” colors to watch for. When your
body is about 3 percent dehydrated your
urine will be more yellow in color. When
your body is about 5 percent dehydrated,
your urine will appear chardonnay-colored.
When your body is more than five percent
dehydrated – which is considered severely
dehydrated – your urine will appear orange
in color and you should seek medical
attention.

SPAC’s new fitness program is turning the ideas of group fitness AND personal training on their
heads. (And their feet. And biceps. and quads.)
Fusion by SPAC uses the latest science to keep your muscles guessing. The goal: The most efficient workout possible,
generating maximum results with minimal time effort. Sound too good to be true? We don’t blame you for thinking so.
That’s why we chatted up Michael Zuehl, SPAC trainer and the man behind Fusion, to learn more:
Q. Who should take a Fusion class?
A. Fusion is designed to work for
people of all fitness levels.
Q. Can elite athletes, recreational
workout buffs, and people new to
exercise really gain benefits from the
same class?
A. Yes! Our program is adaptable
for everyone. Fusion is built around
functional movement. That means that
we use movements that people use
daily, whether they notice or not. For
example: You do a squat every time you
get into or out of a chair. You perform
an overhead press when putting
groceries on a high shelf. We start with
movements that our bodies are already
designed to do, and we make them
more effective and efficient. The weight
and intensity can be customized to an
individual’s ability and goals, but we all
benefit from these movements.
Q. What’s the scientific philosophy
behind Fusion?
A. Fusion is rooted in physics and
biomechanics. (Have we lost you
already?) It’s really about force. Force is
affected by three different elements:
1) Mass—Your body weight plus
whatever weight you’re using for a
movement
2) Distance—The distance you travel
with each repetition, or “rep” of the
exercise
3) Time—How long it takes you to
complete a specific movement/
workout
We optimize these elements to create
the most dynamic, effective workout
possible.
Q. What kind of benefits can
participants expect to see?
A. The beauty of Fusion is that it’s what
you make it. Results happen when our
bodies respond to the principles of
force discussed above. Fusion is about
developing fitness by creating a more
efficient body. The movements are
designed to promote leanness via fat
loss, strength via muscular gains, and
mobility via enhanced range of motion.
Q. Be honest—does Fusion really work?
A. It works, and it works quickly. But
you don’t have to take our word for it.
We piloted a program called Muscle
Playground as a segue into Fusion by
SPAC. After just one month, participants
saw fat loss, muscular gains, and
significantly enhanced mobility.
Q. How long is a typical Fusion class?
A. Fusion is designed to be fast and
efficient. The workout itself will only
last between 6 and 15 minutes. (Yes,
really!) The total class lasts a bit longer
(between 30 and 45 minutes) because
we allow time for a proper warm-up
along with a clinic to teach the day’s
movements and refine form.
Q. How can the workout be so short
but still effective?
A. Fusion is designed to keep every
individual working at his or her
maximum effort for a brief amount of
time. Is it intense? Yes—but it’s intense
at your level. This approach produces
optimal results. There is no need for
long, drawn-out workouts when training
for fitness. Why not achieve maximum
results with minimum time investment?
Q. Is there a good way for a first-timer to
become familiar with the program?
A. Yes! We are offering introductory
classes for people who would like a
chance to become more comfortable
with the exercises and programming
before jumping into the large group
setting. These classes will take place
in small groups, enabling maximal
personal attention.
Q. What makes Fusion different from
all the other group fitness classes out
there?
A. Fusion by SPAC isn’t a group fitness
class. It’s a program. And it’s a program
designed to help every individual reach
his or her fullest fitness potential. Yes,
we work out together, but your workout
experience will be different from the
person next to you, because we meet
you at your level. Instead of standing at
the head of the class leading everyone
through a sequence of exercises, our
coaches will be next to you, making sure
you’re using proper form and giving it
your all. Every single movement has a
purpose, and every person in that room
will be going all out to reach his or her
goals—whether that’s a physique worthy
of a fitness competition or simply the
ability to move through daily life with
more ease and comfort.
