CHEESE STRAWS EQUIPMENT Sifter mixing bowl Oven tray mixing spoon Lemon squeezer biscuit cutters INGREDIENTS 150g flour 80g grated tasty cheese ½ teaspoon salt 1 egg yolk 1/8 teaspoon cayenne ¼ teaspoon lemon juice ¼ teaspoon mustard 1 tablespoon water, if required 60g butter METHOD 1. Set the oven to 160 degrees. Line baking tray with baking paper 2. Sift flour, salt, cayenne and mustard 3. Rub butter into flour, add cheese and mix into a stiff dough with egg yolk and lemon juice. Add water if necessary 4. Knead slightly and roll out 5mm thick. Cut 18 rings, using two cutters of different sizes – inside measurement 2 cm approximately. Cut remaining pastry into strips 5 mm x 6 cm. Place carefully on oven tray 5. Bake at 160 degrees until slightly coloured, 12 – 15 minutes. Allow to cool on tray 6. Place straws through rings before serving Makes 18 bundles
