THE RUM BAR
At the end of the 18th century, West India Docks were some of the busiest docks in the world. Out of the many imports passing
through the docks, Caribbean rum was amongst the most precious and coveted products stored in basement vaults in specially built
warehouses (Warehouses 2-4 and 6-8). Rum was a favourite amongst sailors fuelling their long journeys on the high seas as well as a
staple for their sea faring enemies – Pirates.

Mai Tai 8
Nipperkin Punch 8
Our take on the Tiki classic, with
Appleton’s VX, Trois Rivieres Agricole,
Orange Curacao, freshly squeezed
lime juice and homemade toasted
almond syrup.
Walking Zombie 8.5
A Rum Bar original, a silky smooth
combination of Bacardi spiced
rum, rich almond milk, homemade
vanilla syrup with an added burst of
flamed cinnamon.
Queen Anne’s Revenge 8
New Orleans Sour 8
Named after the famed vessel owned by
Edward Teach (Aka Black Beard) this
is a decedent combination of Bacardi,
fresh passion fruit, homemade vanilla
syrup, freshly squeezed lime juice and
champagne, all poured over mango purée.
Mojito 8
Inspired by Antione Peychaud’s famous
bitters from NOLA, we’ve added Bacardi
Oro, Hennessy VS, freshly squeezed
lemon juice and sugar, shaken and
served up with a fruity Argentinian
Malbec float.
Mary Pickford 8
A heady mix of 3 rums, fresh passion
fruit, fresh pineapple juice, homemade
Demerara syrup, freshly squeezed lime
juice and a dash of Angostura Bitters.
A finer version of this rum-based classic you’ll be hard pressed to find. Bacardi 8 year old, fresh mint, fresh lime
and sugar thoroughly mixed together to
provide that refreshing Mojito hit.
Painkiller 8.5
Enjoyed by the rich and shameless
at the infamous Bacardi parties in
1920’s Havana. Our take on this Cuban
classic includes Bacardi Fuego spiced
rum, caramelised pineapple, fresh
pineapple juice and homemade spiced
pomegranate syrup.
Fog Cutter 8.5
Made famous at the Soggy Dollar Bar,
Jost Van Dyke, British Virgin Islands,
so called because there is no dock on
the island and so the only way to get
to the bar is to swim with your money
in your pocket! Pusser’s rum shaken
with fresh orange juice, fresh
pineapple juice and coconut cream.

Dragon Fruit Punch 8.5
One of our very own creations whereby
we stir down Bacardi Negra, Whiskey
Barrel Aged Bitters, pressed apple juice,
moscovado sugar and a splash of
acorn liqueur.
Renowned Tiki bartender Vic Bergeron
famously remarked of the Fog Cutter
“after two of these you won’t even see
the stuff!”. We bring together Bacardi
Negra, Bacardi Carta Blanca, Hennessy
VS, Olorosso Sherry, Bombay Sapphire,
fresh lemon juice, fresh orange juice and
homemade toasted almond syrup.
Black Rum Sour 8
A luxurious combination of Bacardi
Negra, peach liqueur, Hennessy VS,
fresh lemon juice and sugar; shaken and
served up.
The one in the beer glass! Featuring
our homemade Young’s London Porter
reduction, Myer’s dark rum, Pedro
Ximenez Sherry, Liquorice Bitters,
fresh lemon juice and a dash of sugar.

Boston Tea Party 8
As part of growing unrest in the colonies,
primarily due to over-inflated rum tax,
1773 saw the landmark protest in Boston
harbour that resulted in an entire East
India Company shipment of tea being
destroyed. We have taken a gentler
approach by infusing Pomegranate tea
into a cocktail of Plantation 3 Star rum,
Balthazar Rose Vermouth and coffee
bean infused ginger bitters.
Black Pearl 8.9
The love-child of a Champagne
Cocktail and a lava lamp! First we
pour Bacardi 8 year old, sugar and
Champagne into a tall flute, then we
add our Kahlua infused ‘black pearls’.
Heisenberg Daiquiri 8.5
House Above the Clouds 8.9
Zacapa 23 year old solera aged rum
is matured at 2300m above sea level
in ‘The House Above the Clouds’. We
stir down the Guatemalan rum with a
mixture of sugar and bitters on our very
own cloud box, and serve it cloaked in
apple-wood smoke.
Fire & Ice 8
Created by our very own mad mixologists, this mixture of Wrey
& Nephew Overproof rum, Green Chartreuse, fresh lime and
homemade Falernum Soda comes straight from our lab.
We combine Gosling’s 151, Bacardi spiced rum, LBV Port,
Benedictine and freshly squeezed lime juice in heated tins before
setting light to the whole lot and throwing it through the air.

Barrel Aged Pina Colada (Serves 2) 15
Café Brulot (Serves 4) 30
Bacardi Oro rum infused with vanilla, nutmeg, orange peel,
clove, all spice and cinnamon before being barrel aged and then
shaken together with coconut cream and freshly squeezed
pineapple juice.
Scorpion Bowl (Serves 2) 15
A Tiki-tastic adventure in a bowl, be transported to French
Polynesia with a blend of Bacardi Carta Blanca & Carta Negra,
Hennessy VS, fresh orange and lemon juices, fresh passion fruit
and homemade toasted almond syrup.
Antoine’s Restaurant has stood in the French Quarter of New
Orleans since 1840, and they created this flaming bowl of alcohol
and coffee. Naturally we have given it the Rum Bar treatment
and combined Bacardi Oro, Orange Curacao, orange peel, cloves,
cinnamon, sugar and piping hot coffee
