SPARKLING
Sparkling wine is produced all over the world. The most well known kind of sparkling wine is clearly Champagne. Champagne is a region in
France, about an hour and a half northwest of Paris. Three grape varietals can be used to produce Champagne: Pinot Noir, Pinot Meunier and
Chardonnay. Therefore, for a wine to be called Champagne, it may only come from the Champagne region in France. Other sparkling wines
are called Cremant in other regions in France, Cava in Spain, Asti or Prosecco in Italy, or simply sparkling wine.

ROSÉ
Good quality rose wines are produced by allowing red grape skins to remain in limited contact with the grape juice before fermentation starts,
creating a pink-tinted juice. The skins are then extracted, and the pink juice is treated in the same manner as white juice. The most common
grape used is the Zinfandel grape, producing white zinfandel. Other varietals used are Syrah, Merlot, Grenache, and even Pinot Noir.

RIESLING
Riesling is a grape varietal hailing from the Rhine region in Germany. Riesling is known for being highly terrior-expressive,
where it will showcase different characteristics depending on the earth it is planted in. Riesling drank young will be aromatic and
highly acidic with fruit notes ranging from green apple to warmer climate fruit like peach or grapefruit. As the result of its high
acidity, Riesling is a prime candidate for extended aging, especially those from Germany & France. Old World Rieslings have big
petrol notes of the nose, minerality like slate and bright, round fruit. Riesling is also a great ‘food-wine’ due to its balance of sugar
and acidity and overall, lighter weight vs. most white wines.

GEWÜRZTRAMINER
Gewürztraminer is an aromatic grape varietal that is very similar to Riesling. Like Riesling, it is a great ‘food-wine’ because of its acidity
and baking spice notes. Gewürztraminer grows well in cool climates and therefore, can be found in areas ranging from Germany, France,
USA and even Canada. Flavor profiles range from lychee and tropical fruit, to leaner versions with pear or granny smith apple notes.

PINOT GRIGIO / PINOT GRIS
Similar to Syrah & Shiraz, Pinot Grigio is Pinot Gris and vice versa. Pinot Gris/Grigio has a style showcasing honey fruit notes such
as pear and apple or in some cases more tropical fruit like pineapple and melon. They are often smooth, medium-bodied wines
with fresh aromas, marked acidity and medium to dry bodied.

SAUVIGNON BLANC
Sauvignon Blanc originates from the Bordeaux region in France. It most likely gets its name from sauvage (wild) and blanc (white)
due to its lively freshness, crisp and dry nuances. Typically, Sauvignon Blanc is drank young and will range from grassy & citrusy
in the US, grapefruit & tropical notes in the New World regions like New Zealand, to crisp & mineral in France.

CHARDONNAY
Chardonnay is one of the most important and famous grape varietals in the world. For the most part, Chardonnay is produced wherever
wine is grown. It is also one of three grapes that can be used in Champagne. These days, Chardonnay has two very distinct ways it can
be aged; in oak casks or stainless steel. Each method will offer a full bodied, rich, fruit driven wine. Stainless steel will provide a more
lively Chardonnay with crisp acidity and typically apple driven fruit. Wood can allow the Chardonnay to develop more rich, complex
flavors like hazelnut, vanilla, smoke and an array of others.

PINOT NOIR
Pinot Noir’s name comes from the French words pine and black due to its pinecone like, dark fruit clusters on the vine. Overall, Pinot Noir is
considered to produce some of the finest wines in the world, especially in its home of Burgundy, France. One reason for its intrigue is that it is
a very finicky grape that needs a lot of extra attention, a very particular cool climate and has a thin grape skin, leading it to be very susceptible
to different conditions in nature. Hence, besides showcasing wonderful aromas of classic black cherry, raspberry, baking spice and damp earth
notes, it’s finalized product comes after much tender love and care.

ZINFANDEL
Zinfandel’s past is cloudy because many historians aren’t exactly sure how this grape came to be. What we do know is Zinfandel is a relative of
the Italian varietal, Primitivo and yet, it’s almost exclusive to California. For many years, Zinfandel was grown primarily to produce rose wines,
aka White Zinfandel, but since the late ‘80s, ‘Red Zins’ have gained popularity. These emphasize jammy fruit, zesty tannins and black pepper notes.

UNIQUE RED VARIETALS & RED BLENDS
These are great wines that don’t fit neatly into any category. Some are simply uncommon, small produced varietals, others are intriguing
blends, and others, varietals unique to a specific geographical area. Judge for yourself, we think they’re pretty cool wines to try.

ITALY
Italy is the world’s largest producer of wine and also, making wine for more than 3,000 years. Getting to know Italian wines can be
a bit challenging to say the least. There are 20 wine regions, a four-tiered classification system used in each region and over
350 documented grape varietals being used. Its two main red wine regions are Tuscany & Piedmont. In Tuscany, Sangiovese reigns
supreme which is the varietal used to produce Chianti. In Piedmont, the main varietal is Nebbiolo, which is used to produce Italy’s
big heavyweights, Barolo & Barbaresco.

SPAIN & PORTUGAL
Spain has the most acreage of land dedicated to vines in the world but, is only the third largest producer of wine, behind France & Italy. This is
the result of low yields and wide old vine spacing found amongst the infertile soil across many of Spain’s wine regions. The three main regions are
Rioja, Priorat & Ribera del Duero. Rioja & Ribera del Duero concentrate mainly on the Tempranillo grape, while Priorat’s main varietal is Garnacha.

SYRAH / SHIRAZ
To clarify, syrah is shiraz and shiraz is syrah. Syrah, as it’s called in most areas of the world, originated in France and is thought to be
specifically from the Rhone region. It is called Shiraz mainly in Australia & South Africa. This grape is very full-flavored and produces a
wide range of flavors. Dark berry is fairly universal and other notes seen are coffee, violets, spice and chocolate. In Northern Rhone,
Syrah is renowned for producing elegant, tannic, sturdy wines of deep purple color, capable of aging for many years.

SOUTHEAST FRANCE & GRENACHE, SYRAH, MOURVEDRE BLENDS
Often, one will find these varietals paired together in ‘GSM’ blended wines. GSM stands for Grenache, Syrah & Mourvedre varietals, made
famous by France’s Cotes du Rhone & Chateauneuf du Pape regions. Grenache (Garnacha) is one of the most widely planted grapes in the
world. Grenache produces soft-tannin wines with flavors of sweet plum, black currant, spice & tobacco. Mourvedre then, offers the backbone
for many of these wines with tannic notes of darker berry fruit, earth & wild gamey flavors.

MERLOT
Merlot is a dark blue-colored grape that originates from the Bordeaux region in France. It’s the most widely planted grape in Bordeaux and
also, the third most planted red grape in the world. Merlot creates medium-bodied wines with softer tannins and fruit notes of plum, currant
& berry. Merlot ripens early and if blended, works well with its late-ripening and more tannic sibling, Cabernet Sauvignon.

BORDEAUX BLENDS, CABERNET FRANC & MALBEC
Five grapes are allowed in Bordeaux red wine. They are Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot & Malbec (and
recently Carmenere is thought to be the sixth). These grapes produce some of the most recognizable names in wine and stylistically,
are mimicked all over the world. When not blended and made into a single varietal wine, Cabernet Franc can typically be thought of
as a bit more rustic version of Cabernet Sauvignon, with notes of cassis, bell pepper, violets & tobacco. With Malbec, there’s been an
explosion of wines, especially from South America, showcasing its deep purple color, ripe, fruit forward notes and soft tannins.
