STEEL CUT OATS
Oats are a nutritious addition to cookies, muffins and breads. They add a subtle sweetness
and help to keep your baked goods moist. Add up to a cup of cooked oats (see Irish Oatmeal
directions below) to your recipe, reducing the liquid a bit. Or, to add a bit of crunch, combine
1/3 to 1/2 cup oats with an equal amount of boiling water; let stand until cool.
IRISH OATMEAL
4 cups water
1 cup steel-cut oats
1 cup dried fruit (cherries, blueberries, raisins, apricots, etc.)
salt to taste
Bring the water to a boil in a
medium saucepan. Add the oats
and stir. Turn the heat down to
low and simmer for 30 minutes, or
until the water has been absorbed.
Stir in the dried fruit and salt. Let
sit, covered, for 5 minutes before
serving.
Yield: 4 one-cup servings.
Microwave Instructions: Place 1/4
cup steel-cut oats, 1 cup water
and a pinch of salt in a deep,
microwave-safe bowl (oatmeal
boils over easily, so be sure to use
a deep bowl). Microwave on medium power for 8 minutes, stir, let
sit for 5 minutes, then microwave
for an additional 2 to 3 minutes,
if needed. In some very powerful
ovens, cooking oatmeal for 2 minutes on high, stirring, then cooking
for an additional 6 to 8 minutes
on medium-low may produce a
creamier oatmeal.
Yield: one serving.
Store cool and dry.
