Turn the heat down to low and simmer for 30 minutes, or until the water has been absorbed. Stir in the dried fruit and salt. Let sit, covered, for 5 minutes before serving. Yield: 4 one-cup servings. Microwave Instructions: Place 1/4 cup steel-cut oats, 1 cup water and a pinch of salt in a deep, microwave-safe bowl (oatmeal boils over easily, so be sure to use a deep bowl). Microwave on medium power for 8 minutes, stir, let sit for 5 minutes, then microwave for an additional 2 to 3 minutes, if needed. In some very powerful ovens, cooking oatmeal for 2 minutes on high, stirring, then cooking for an additional 6 to 8 minutes on medium-low may produce a creamier oatmeal. Yield: one serving.
