Easy Peasy Basic Vanilla Cupcakes
Makes 18 cupcakes, 24 fairy cakes or 36 mini muffins
225g/8oz butter, at room temperature
225g/8oz caster sugar
4 medium eggs, lightly beaten
225g/8oz self-raising flour
½ tsp baking powder
2 Tbl semi-skimmed milk
1 tsp vanilla extract
Preheat oven to 180®C/Gas mark 4. Line trays with paper cases.
1. Whisk the butter and sugar together, with an electric hand mixer until light and fluffy.
2. Whisk in the egg gradually, adding a teaspoon of flour with each addition, this will prevent
curdling.
3. Sift the remaining flour and baking powder into the mixture and gradually whisk in the milk
and vanilla extract.
4. Spoon into paper cases and bake for 25 minutes for cupcakes, 15 minutes for fairy cakes or
12 minutes for mini muffins.
5. Cool on wire racks and ice as desired.
