Serving: Makes approximately 8 jars / 1 Litre jars 30 cups 6 large 3 large 3 2 1½ 2 8 1 cup 2 tbsp 2 pkgs 1 pkg 6 cups ½ cup Pinch Cilantro Roma tomatoes Onions Green peppers Red peppers Yellow peppers Celery stalks garlic bulbs jalapeno peppers (adjust per your taste for mild, medium, hot!) vinegar sugar salsa spice or tex mex fahita mix fresh corn maple syrup basil optional/extra 1. To peel tomatoes: take out stem and score bottom of tomato with an X pattern; blanch tomatoes in boiling water for 5-10 minutes; place tomatoes in ice water bath; drain to cool further; tomato skins will be easy to peel off. Squeeze tomatoes to remove any excess water (most seeds will also be removed at same time) 2. Dice/chop tomatoes to desired chunkiness in pot. 3. Add all other remaining ingredients. Bring to boil 4.
