Joanna Lumley’s Chocolate Orange Cake shelter.org.uk/caketime Cooks in 45 Joanna Lumley’s Chocolate Orange Cake minutes Preparation time: 1 hour | Cooking time: 45 minutes Ingredients 1 small orange 100g self-raising flour 1 teaspoon baking powder 1 teaspoon powdered cinnamon 1 teaspoon ground coriander 2 tablespoons cocoa powder 100g ground almonds 175g softened butter 175g light muscovado sugar 4 eggs, separated Method 1. Preheat the oven to 180C/Gas Mark 4. Butter and line the base of a 22/23cm round cake tin. 2. Put the orange in a small pan and cover with water. Bring to the boil, simmer partly covered for one hour, then drain and leave to cool. 3. Halve the orange, remove the pips, then chop the whole fruit. Put into a food processor and work to a rough purée. 4. Sift together the flour, baking powder, spices and cocoa. Stir in the ground almonds. 5. Whisk together the butter and sugar, beat in the egg yolks and the orange, then fold in the flour mix. 6. Using a clean whisk, beat the egg whites until stiff, then fold into the cake mix. 7. Pour into the cake tin, then bake for 40-45 minutes until firm to the touch.
