½ cup of fine semolina
3 teaspoons of baking powder
½ cup sugar
¼ cup margarine for coating
Cheese filling ingredients:
2 cups of local white cheese
1 teaspoon of black cumin (nigella sativa)
1 teaspoon of sugar with 2 pieces of crushed mastic
Walnut filling ingredients:
1 cup of coarsely chopped walnut
1 tablespoon of cinnamon
3 tablespoons of sugar
1 tablespoon of Delicio Rose Water
Syrup Ingredients
4 cups of water
2 cups of sugar
1 spoon of lemon juice
1 spoon Delicio Rose Water

Directions:
METHOD
Put the water into a blender then add semolina, sugar and baking powder and blend the mixture
until thoroughly blended
In hot pan, add ¼ cup of the dough.
Wait until bubbles are formed (Don’t flip)
Set the Katayef aside in a dish and cover with towel until you finish with the whole quantity.
Mix the filling ingredients, put one spoon for each piece of Katayef, and close tightly on all sides.
Arrange the filled Katayef closely on baking tray.
Add little margarine over the top of each piece and bake in a moderate oven (180 degrees) for 20
minutes.
Remove from oven, add syrup and serve.
For Syrup: Put sugar and water in a pot and let it boil. Add lemon juice and Delicio Rose Water then
remove from heat.
Hint
Put the water first into a blender and then the flour and other ingredients for better consistency.
You can also use the same dough for Katayef Asafiri (mini) and chocolate-coated Katayef
When pouring dough use coffee pot or a tablespoon for pouring chocolate
