Even if somehow “diluted” they would still be in the “extra homemade jams” category. However, we decided to offer “ mmmarmalades” whose fruit content by far exceeds any high-class category of jams. After all, you deserve them, right? There are marmalades, homemade marmalades, extra homemade marmalades and – mmmarmalades! A jar of mmmarmalade Beatrice is so much more than just a jar of extra homemade jam; it is a jar of concentrated fruit! Life nowadays is fast, too fast. There are so many tasks on our to-do lists, demanding our time, but not deserving it. We are always in a hurry, missing the opportunities to experience not only what time takes away but rather what it has to offer. Something genuine and really worthwhile. We miss that. And sometimes, we indulge in it. Marmalades and jams are a good example of how varying the quality of today’s life can be. For example, we can buy a cheap product that despite being labelled as “marmalade” contains very low quantities of fruit (even as little as 20 g of citrus fruits in 100 g of product) and is instead filled with gelling agents, antioxidants and other additives. It seems as if the only goal is to turn one kilogram of fruit into as many products as possible. In the end, the industrial feel to it leaves customers unsatisfied and disappointed. A whole different category: mmmarmalades Beatrice They contain four times the amount of fruit specified for the “highest” category of jams, i.e. “extra homemade jams”. Beatrice comes from Karst. She was brought to the village of Tomaj by Vojka and Jurij. It was is how we named our home after we had moved to the Karst region of Slovenia in 2006. The name itself has a whole range of noble meanings: Beatrice is the bearer of bliss, born from well-being, focused on that perfect blend of vita activa (active life) and vita contemplativa (contemplative life). After years of creating these little spells of culinary magic, we have decided to give our mmmarmalades a name that has become so well-known among our friends: Beatrice. Who created you, Beatrice? To be honest, we are not professional chefs. Vojka is a journalist, working (mainly) as a communication strategist and creative director. Jurij is a medical doctor, working (mainly) as a consultant in the health care sector and pharmaceutical industry. But when we finally find time to indulge in the beauty of life, our kitchen becomes immediately and deliciously filled with the scent of those little spells of culinary magic.Thus, the name Beatrice can never be associated with a serial industrial product, it is always a unique creation of gourmet magic. previous page t mmmarmalade Vojka Žgavec Clemenz: “ The fact that I started making jams already at the age of 10 was a “coincidence”. When I was growing up, three bountiful apricot trees in our front yard bore more than enough fruit for both our family and the whole neighbourhood. In order not to waste any of the delicious and precious fruits, I made my first apricot jam based on the following recipe: 1 kg of fruit, 1 kg of sugar. Since then, I have of course learned that recipes for apricot or other kinds of jams can contain a lot less sugar and a lot more taste! ” next page u Beatr ce little spells of culinary magic From presents for friends to the brand Beatrice At first, we created marmalades and jams for ourselves and our friends. But due to the abundance of high-quality fruit available in the local area, the amount of mmmarmalade has grown increasingly. After persistent lobbying of friends, we decided to make mmmarmalades Beatrice for anyone who can appreciate the value of high quality, authenticity and uniqueness. All of our mmmarmalade recipes are original The kitchen is the heart of Beatrice, our house in Karst. It is where we create all kinds of delicacies. Sometimes we are just hungry, but more often, we crave relaxation. And this is how we came up with numerous mmmarmalade recipes, revised and updated throughout the years. Nowadays, we create various types of mmmarmalade magic: some mmmarmalades are mixed, others contain one type of fruit only, some have very “pure” tastes and some are spiced with cinnamon, nutmeg or ginger. They may contain fruits or vegetables or both. Fruits and vegetables of premium quality, elaborate tastes and especially our love for culinary creation – these are all sound guarantees of the uniqueness of each single mmmarmalade Beatrice. Out of the orchard and into a saucepan Fruits and vegetables travel the shortest possible journey to our stove. Whereas on the other hand: I find great pleasure in picking up a wooden spoon and whipping up something delicious after a week-long business trip – the pure delight of it proves that we still know how to live well. And I admit: when it comes to food, I have the strictest standards and I expect no less from others. That is why I am only satisfied with creating the best of the best. ” next page u Beatr ce little spells of culinary magic The secret of mmmarmalades Beatrice: they contain fruits and vegetables of the highest quality, fully ripened on the plant and not in the shop Jams are actually not that difficult to make. However, top-quality jam magic does require certain skills. Any detail counts. The key factor, however, is choosing the right fruit or vegetable. Mmmarmalades Beatrice are made of fruit that we have ourselves picked from orchards in the direct vicinity of our home, or else it has grown either just a few kilometres away or in the nearby Vipava Valley. We consistently use only fruit and vegetables that had ripened on a tree or in a garden and were picked to be cooked shortly after. The only exception are citrus fruits from sunny Sicily but even they are marmaladed as soon as we receive them. “Opening a jar of your mmmarmalade immediately releases a delightfully fruity aroma!” Such surprised exclamations of our “tasters” are actually quite concerning. After all, marmalades and jams should always release a fruity aroma. True, mmmarmalades Beatrice have an extravagantly high concentration of fruit content. We intend to insist on that. Our mmmarmalades should always evoke the delicious scent of fruit, encouraging some to delve into them with a teaspoon, forgetting about bread or any other side dishes. Here is a jar of sun for you! “Your mmmarmalades not only contain concentrated fruit but concentrated sun as well,” claim the loyal fans of mmmarmalades Beatrice. Of course, how could they not: after all, Beatrice lives in the village of Tomaj which is known as the place with the most hours of sunshine in Slovenia. previous page t mmmarmalade next page u Beatr ce little spells of culinary magic Mmmarmalades Beatrice are left bubbling on the stove for 10 to 26 hours Mmmarmalades Beatrice take their time. During the long hours of cooking, most of the fruit juice evaporates, causing mmmarmalades to thicken in a purely natural way. The fruity aroma intensifies – such a delight for our taste buds! During our typical cooking session, we create only 25 to 30 jars of mmmarmalade (212 ml) On average, about 8 kg of fruit is slowly cooked in a saucepan, producing some 25 - 30 jars of mmmarmalade. We fill the jars by hand, often burning our fingers. But it is worth it. Mmmarmalades Beatrice enjoy the sweetness of their own fruits and vegetables, with very little added sugar According to the national regulation, marmalades and jams should be labelled with a clear indication of the total sugar content (in grams) in 100 g of product. Unfortunately, however, it is not possible to separate these sugars to “added sugars” and “fruit sugars”. We know that there is quite a difference in quality between refined sugars and fruit sugars (fructose). Because mmmarmalades Beatrice are cooked for such a long time and because they are made of premium, sun-ripened fruit, their total sugar content is almost entirely derived from fruit (or vegetables).
