Teriyaki Tofu Burgers - Mohawk

Teriyaki Tofu Burgers
Guest chef Motoyo Suzuki wowed campers and staff alike with these hearty, tasty and
nutritious burgers. A great alternative to beef or turkey burgers!
Ingredients:
1-14 ounce soft or medium-firm tofu
1 cup chopped onions
1 ½ tablespoon butter
½ teaspoon sugar
2 large eggs
½ teaspoon salt
ground pepper to taste
1 cup panko or breadcrumbs
Teriyaki Sauce
2 tablespoons sugar
2 tablespoons mirin
3 tablespoons soy sauce
(Bottled/prepared teriyaki sauce is fine!)

Mixing bowls
Plastic wrap
Heavy books (for draining tofu)
Nonstick frying pan with cover
• Spatula
• Cutting board and knife
• Whisk
Steps:
1. Place tofu in a shallow bowl or pan and cut into quarters. Cover with plastic wrap, stack a
couple of heavy books on top, and let stand for 15 minutes to get excess liquid out.
2. ADULT HELP TIME! In a nonstick frying pan over medium heat, melt 1 tablespoon of the
butter and sprinkle in the sugar. Add the chopped onions and sauté until golden brown,
for about 6 minutes. Turn the heat off and let the onions cool slightly.
3. Put the pressed tofu in a large mixing bowl and mash it with a whisk until it becomes
smooth (no big bits and pieces). Add the eggs, salt, pepper and sautéed onions, and mix.
Add the panko/breadcrumbs and mix again until all the ingredients are well incorporated.
4. Divide the mixture into quarters and form 4 oval patties.
5. ADULT HELP TIME! Heat a nonstick frying pan over medium heat. Add the remaining ½
tablespoon butter. When the butter is melted, add the patties to the pan, cover and cook
for 3 minutes per side. Cook them in batches if necessary. Plate them on serving dishes.
6. For the Teriyaki Sauce: Combine all the ingredients in a small mixing bowl and mix in the
same frying pan over low heat, cook the sauce mixture until it becomes slightly syrupy.
7. Pour the sauce over the hamburgers, and enjoy!
