Classic Gingerbread Men Ingredients: 3/4 cup packed dark brown sugar 1 stick butter or margarine, softened 2 large eggs 1/4 cup molasses 3‐3/4 cups all‐purpose flour, plus more for dusting work surface 3 tsp. ground ginger 1‐1/2 tsp. baking soda 1/2 tsp. ground cinnamon 1/2 tsp. salt 1 cup confectioners' sugar, sifted 2 Tbsp. butter 1 to 2 Tbsp. milk Candy decorations (optional) Directions: 1. Cream the sugar and butter until thoroughly combined. Add eggs and molasses and mix until combined. In a separate bowl, mix together flour, ginger, baking soda, cinnamon, and salt. Add the dry ingredients to the butter mixture and mix well. 2. Remove the dough from bowl and cover completely in plastic wrap. Refrigerate until firm, or about 1 hour. 3. Preheat the oven to 350°F. 4. Line cookie sheets with parchment paper. Remove dough from refrigerator and let sit at room temperature for about 15 minutes. Take about 1/2 cup of dough at a time and roll onto a floured board until about 1/8” thick. 5. Cut out with gingerbread man cookie cutters. Using a spatula, transfer cookie cut‐outs from the board to the prepared cookie sheets. 5. Bake for 10 minutes, or until edges turn golden brown. Cool on wire racks. Repeat steps 4‐6 until all remaining dough is used. 6. To make the icing, combine the confectioners' sugar, butter and milk. Decorate piping eyes, mouths, buttons, and bow ties. Decorate with candy as desired.
