Actual annotated genuine research, as well as hard empirical evidence gained
by chatting to a few folks over their glasses of Hawke’s Bay Pinot Gris and
bottles of Craft Beer is…locally sourced is where it’s at. Any menu worth its
Himalayan salt will need to contain the best from the rest of the world, of
course, but customers are very keen that what they eat comes from “around
here”. Meaning if not within a 10km radius, at least from these isles. It reflects
a growing (!) trend globally and it’s pretty simple: we produce/grow/craft/
create great things here so let’s consume them. From Clevedon oysters to
Waiheke wines, keeping it clean, green and Kiwi never tasted so good…

the ready? A greaseless chainsaw?
Well, the big trend over the last
northern summer or two has been
hand crafted ice, for everything
from displays to cocktails. Getting
a big block delivered and carved

customers soon want to choose to
have that ice crushed, in cubes for the
shaker, hand-cracked, or in a punch

in front of them? It never ends, does it?!

As we head toward the time of year when
customers in festive moods are prepared
to try something different, and a little more

There’s a big swing towards the small
