What could be better on a summer day!
Double-Crust APPle Pie
3 tablespoons Pamela's Gluten-Free Bread Mix
(no yeast is needed for this recipe)
3/4 cup sugar
1/2 tsp cinnamon
1/8 tsp salt
2-1/2 pounds apples
1 tsp freshly squeezed lemon juice, strained
1 tbsp unsalted butter
1 full recipe Pamela's Easy Pie Crust
Additional 1 tablespoon of sugar mixed with 1/4 teaspoon
ground cinnamon to dust upper crust before baking
Preheat oven to 425°.
Combine Pamela’s Gluten-Free Bread Mix, sugar, ground
cinnamon and salt and whisk together to combine well.
Do not use the enclosed yeast packet in this recipe.
Peel, core, and thinly slice apples. Toss with lemon juice. Add dry ingredients
to apples and toss to combine well.
Prepare an untrimmed 9-inch pie shell prepared according to the recipe for
Pamela’s Easy Pie Crust. Read more about rolling and handling wheat-free

Carefully turn apple mixture into prepared shell. Dot with butter. Cover with
upper crust, align and trim edges. Seal, moistening if necessary, as directed
for double crust pies in Pamela’s Easy Pie Crust.
Use a sharp knife to pierce several vents in upper crust. Dust finished pie
with additional sugar and cinnamon. Bake on bottom rack of preheated 425°
oven for 15 minutes. Reduce oven temperature to 350° and carefully cover
pie with aluminum foil. Bake 35 minutes more or until juices are bubbling
through the vents. Remove foil and cool completely on a wire rack before
serving. Filling may require 3 hours or more to fully thicken. To serve pie
warm, replace aluminum foil to prevent crust from over-browning and
reheat for 15 minutes in a preheated 350° oven.

MINI CORN DOGS
1 pack uncured, nitrate gluten free 100% Beef hot dogs
2 cups Pamela's Wheat-Free Bread Mix
(without yeast packet)
1 cup yellow cornmeal
1 teaspoon sea salt
2 eggs slightly beaten
2 cups warm water
In a 12 inch skillet heat approximately 2 inches of oil to 375°.
Slice hot dogs into quarters and set aside. Mix dry ingredients
together. Lightly whisk eggs and water. Add wet ingredients
to dry ingredients, whisking until smooth. Heavily coat sliced
hot dogs in batter and place in hot oil for about 4 minutes
until dark golden brown. Drain hot dogs on cooling rack
and serve.
PAmelA's bAnAnA breAD
4 tablespoons butter, melted
1/2 cup sugar or honey
2 eggs, beaten
1 cup banana, mashed
1-3/4 cups Pamela's Baking & Pancake Mix
1/4 teaspoon salt
1/2 teaspoon vanilla
1/2 cup nuts (optional)
Beat together butter, sugar or honey, eggs and banana.
Add remaining ingredients and mix together. Pour into a
large greased loaf pan.
Bake in a preheated 350° oven for 1 hour, or until an
inserted toothpick comes out clean.

SINGLE COOKIE LOLLIPOPS
Create these elegant and edible decorations.
This is a fun activity to do with children.
Simplebite Mini Cookies
- Extreme Chocolate &/or
- Ginger Mini Snapz
4-inch toothpicks or small skewers
Pamela’s Vanilla Frosting Mix
Any edible decorations, such as sanding sugar,
sugar crystals, pearls, and mini chocolate chips
Using a long toothpick, carefully work pointed end into cookie edge
until it holds. Insert toothpick into as many cookies as you need,
plus a few extra for practice. Lay skewered cookies on a sheet pan
covered with parchment paper.
Prepare Cookie Icing
Mix one bag of Pamela's Vanilla Frosting Mix with up to
3 tbsp water. For fun colors, add wet or dry food coloring.
Separate the icing into different small bowls for making
several colors. Keep color separate. When using food
coloring reduce water to 2 tbsp, add more water if needed
for desired consistency. Thin with small amounts of water
until the icing can be poured smoothly. Use dry food
coloring for brighter colors. Icing will harden when dry.
Dip skewered cookies in icing, or with a spoon or small
spatula drape icing over cookies. Cover entire cookie,
front, back, and edges, including where the toothpick is
inserted. Gently shake off all excess icing, and lay on cover
sheet pan until set-up.
At this point either: let them dry and set-up for decorating
at a later time, or before lying down, cover with sanding
sugar, sugar crystals, sprinkles, nuts or seasonal decorations.
Then lay on paper to set-up.
Be sure the frosting has set completely before moving.
Once set, drizzle chocolate over the cookies.

UGLY APPLE FRITTERS
1 cup Pamela's Baking & Pancake Mix
1 tsp. Baking Powder
2 tbl. sugar
1/4 tsp. salt
1 tsp. cardamom (optional)
1 egg (beaten)
1/4 cup milk
3 granny smith apples peeled, cored, and chopped
into small pieces
hot canola oil for deep frying
Yield = 36 to 42"
Sift together-flour, baking powder, sugar, salt, and
cardamom. Add milk to beaten egg. Stir into dry
ingredients. Stir in chopped apple bits. Drop batter
by teaspoonfuls into hot oil until browned on both
sides. Drain on paper towels.
Notes:
Powdered sugar can be sprinkled on for added
sweetness, but not necessary. Other fruit may be
used also. Can be put in snack bags and frozen
for future snacks for kids.
This mix will look like there are too many apples
in the mix, but when you fry them they come
out ugly and lumpy, but oh so gooooood.
PARFAITS
Easy but elegant- parfaits with Pamela’s
cake mix and pudding. Use either vanilla
or chocolate for the cake and pudding.
Prepare cake to recipe directions on
packaging for a 9x13 pan. Cut up the
cake to the appropriate size to fit your
serving ware. Layer the cake and pudding
to your liking
Top with whipped cream, berries or
chocolate shavings, etc.
