THE HOT DOG IS THE ULTIMATE
hand-held snack. It’s hot and tasty, does a
great job of satisfying hunger and is easy
to eat on-the-move. From an operational
perspective it requires little preparation and
offers a good profit margin.
The idea of a sausage in a bun with a
garnish goes way back, but at a time when
eating on-the-go has become part of our
culture, hot dogs are experiencing something
of a renaissance.
Research commissioned from TNS by
Rollover in September 2011 indicated that
30% of the UK population had eaten a hot
dog outside the home at least once in the
previous 12 months. The age group most likely
to order a hot dog is the under-35s and within
this group, Rollover is the leading brand with
an 18% share of the market, up 4% on 2008
figures and way ahead of any competitors.
At Rollover, the aim is to provide the
ultimate hot dog experience for consumers
in a way that is cost and time efficient for the
operator. The company achieves this through
innovation in its equipment, which is specifically
designed for the delivery of hot dogs.
The traditional method of hot dog delivery
is through a bain marie, and Rollover can
supply these either as a tabletop unit or in a
range of carts. Other tabletop options include
a rollergrill and a stadia warmer. However, its
latest innovation is a dual steamer that holds
40 hot dog sausages – plus nine baguettes
- and brings them up to temperature within
30 minutes where they can then be held for
all-day availability.
The system has been a hit in convenience
stores, such as Nisa, Londis and McColl’s,
where it provides strong competition to bakeoff items and it is ideal for contract caterers

looking for retail concepts to differentiate
themselves and to catch customers’ attention.
The steamer is free-on-loan so there’s
no capital outlay and it’s easy to use. The
compact unit measures just 38cm wide
by 36cm deep and there’s no plumbing-in
required, just fill with fresh water every day
and empty out and clean at the end of the day.
A temperature probe is provided to ensure a
correct holding temperature of 65-70˚C.
Of course, you’ll need products to serve
and Rollover supplies these too. Mindful of the
increasing demand from today’s consumers
for a premium product, the sausage is a
German Bockwurst smoked over beechwood
and contains 87% pork with no MRM or GM
ingredients. Various sizes are available from
the standard 90g and jumbo140g to a 50g
low-salt version for children that complies with
FSA guidelines. There’s also a low-salt option
on the standard and jumbo sausages, in
addition to a halal product. All are pre-cooked
to eliminate any hygiene issues and they have
a six-month ambient shelf life.
The baguettes are pre-baked and presliced and thaw in two hours ready to serve. Of
course, no hot dog offer is complete without a
range of sauces so Rollover has nine including
traditional favourites ketchup and mustard.
To meet the demand for US-style hot
dogs there’s also a sausage made with
70% beef to an authentic American recipe
and served in a deli roll with sauerkraut and
gherkins.
The recommended selling price per hot dog
is £1.69 but operators can set their own selling
price with margins in excess 40% achievable.
Point-of-sale material, including loyalty cards
and stamps, are free and there’s a range of
disposables for serving.
Consumers will already be familiar with
the Rollover brand as it’s on sale at many
high-profile locations including 14 out of
20 premiership football clubs, the NEC, the
O2 and MEN arenas, and
Cineworld and Bourne
