Hop Extract: What is it? How do you use it? Hop extract is a liquid CO2 extraction of the alpha and beta acids as well as all of the hop oils. This means you get all the good from the hops with none of the wort losses. The extract is also extremely stable so you can store it in the fridge or freezer for months to years with no noticeable degradation. The extract will give a very clean bitterness and bright hop character without the grassiness or trub losses. Hop extract is used extensively by commercial breweries and is included in the recipes for some of the best commercial IPA’s and Double IPA’s in the world. Just like hops! You can use hop extract for any addition as it is derived from an Apollo and Columbus hop blend. Soak the hop shot syringe in 120F/130F water until it has liquified then remove the cap and squirt the appropriate amount as you would use regular hops. Hop extract has all the same oils and alpha/beta acids as both whole leaf and pellet hops, so you can use hop extract for bittering and late hop additions. Use the chart below to determine the proper amount to use. How much in 5 gallons for a 60 minute hop addition? For 30 min boil additions, increase usage by 10%. For the math nerds, here’s the real formula, our hop extract is 61.5% gmAA per ml: GmAA = IBU x (BBL/0.8522) 3.5* Examples: 1.060 wort at 60 IBU’s in a 5G batch for a 60 min boil 1.060 wort at 60 IBU’s in a 10G batch for a 60 min boil 60 IBUs/10 = 6ml hop extract 60 IBUs/10 = 6ml * 2 = 12ml hop extract 1.090 wort at 120 IBU’s in a 5G batch for a 90 min boil 1.080 wort at 70 IBU’s in a 5G batch for a 60 min boil 120 IBUs/9 = 13.3ml * .9 (for 90 min boil) = 12ml hop extract 70 IBUs/9 = 7.7ml hop extract 1.040 wort at 20 IBU’s in a 5G batch for a 30 min boil 20 IBUs/10 = 2ml * 1.10 (for 30 min boil) = 2.2ml hop extract 1.070 wort at 100 IBU’s in a 15G batch for a 60 min boil 100 IBUs/10 = 10ml * 3 (for 15G batch) = 30ml hop extract
