Let’s start with the primary, secondary and tertiary colors and the 3 modes of color.
PRIMARY COLORS
There are only three primary colors:
RED, BLUE & YELLOW
These colors CANNOT be mixed by
combining any other colors.
TERTIARY COLORS
A mixture of one primary color
and one secondary color.

RIGHT COLOR FOR THE RIGHT JOB
The type of cake topping you are using will determine which type of
color is best to use, below is a good reference to guide you.
BUTTERCREAM (OIL-BASED)
Due to the shortening base,
buttercream has a tendency to
darken with time. If you plan on
doing a lot of blacks for Graduation
or reds for Christmas, mixing your
colors a day ahead of time will
intensify your colors, allowing you
to use less color. Premium Gel and
Paste mix in well. Airbrush and
Shimmer Airbrush deliver great
results for an application to the icing.
WHIPPED ICING (WATER-BASED)

Premium Gel or Airbrush colors give
optimal results. All colors have a
tendency to bleed in whipped icing
because the primary ingredient
is water. A little color goes a long
way. It is best to use lighter colors
and avoid any black or red intense
colors when making whipped icing
decorations. Airbrushing over them
will darken them more than trying to
color the product by mixing all the
way through.
FONDANT
Color recipes will need to be
adjusted slightly in fondant when
compared to buttercream. As with
buttercream icing, coloring fondant
the day before and wrapping it tightly
will help the color to mature allowing
you to use less color than if you
colored it the day you mixed. Either
Premium Gel or Paste colors can be
used with fondant.
PIPING GEL
Go lightly. Always stir your colors
into the piping gel. If you fold the
piping gel while you are mixing your
colors you will fill your piping gel with
air bubbles. Since piping gel is clear
or translucent, a little color goes a
long way. Recommend mixing with
Premium Gel Color for best results.
