WHY WE DO THE THINGS WE DO AT NINETY ACRES
We believe in using Biodynamic, Organic and Sustainable ingredients and wines whenever possible. We believe it's
not only important to support local agriculture, but that food and wine produced in this way can lend tastes and
textures that make the dining experience incredibly unique.
Sustainable agriculture refers to the ability of a farm to produce food indefinitely, without causing irreversible damage
to ecosystem health. Two key issues are biophysical (the long-term effects of various practices on soil properties and
processes essential for crop productivity) and socio-economic (the long-term ability of farmers to obtain inputs and
manage resources such as labor).
Organic farming is a form of agriculture which avoids or largely excludes the use of synthetic fertilizers and pesticides,
plant growth regulators, and livestock feed additives. As far as possible, organic farmers rely on crop rotation, crop
residues, animal manures and mechanical cultivation to maintain soil productivity and tilth to supply plant nutrients, and
to control weeds, insects and other pests.
Biodynamic agriculture, or biodynamics is an organic farming system (but predates the term). It is based on the
anthroposophical teachings of Rudolf Steiner, particularly on the eight lectures given by him in 1924 at Schloss
Koberwitz in what was then Silesia, Germany nowadays Poland (close to Wrocław). At the time Steiner believed
that the introduction of chemical farming was a major problem. Steiner was convinced that the quality of food in his
time was degraded, and he believed the source of the problem were artificial fertilizers and pesticides. However, he
did not believe this was only because of the chemical or biological properties relating to the substances involved,
but also due to spiritual shortcomings in the whole chemical approach to farming. Steiner considered the world and
everything in it as simultaneously spiritual and material in nature, an approach termed monism. He also believed that
living matter was different from dead matter, a viewpoint commonly referred to as vitalism.
The term biodynamic was coined by Steiner's adherents. Any biodynamic produce is also organic. A biodynamic farm
works exactly the same as an organic farm in using no pesticides, herbicides etc., but there are various agricultural
methods which are unique to biodynamic farming. These include field and compost preparations and the use of an
astrological calendar to determine times of planting and harvesting. Biodynamic produce is certified by Demeter, but
can be certified by an organic certifying body as well. A central aspect of biodynamics is
that the farm as a whole is seen as an organism, and therefore should be a closed, self-nourishing system.

CHABLIS: PATRICK PIUZE
After running a wine bar in Montreal for two years, Patrick Piuze moved to Burgundy in 2000 and he spent the harvest with
Olivier Leflaive in Puligny-Montrachet. Shortly after, Piuze was entrusted with the vinification of Laflaive’s new Chablis project
and Patrick spent four years there honing his skills as a winemaker. After Jean-Marc Brocard recruited him to be cellar master
and head wine maker, he left to set out on his own and bottle under his own name. Not one to ease into things slowly,
his first vintage in 2008 consisted of 20 different bottlings, all Chablis except for one.
The approach in the cellar is hands-off; indigenous yeasts are used and nothing is added nor taken away.
Patrick Piuze is obsessed with drawing out the essence of terroir and every bottle is very specific, highlighting the parcels that
the wines come from. Even his entry-level wines, where most producers would blend plots together, he bottles five separate
“Terroir” cuvees at the Villages level, each labeled with the name of the village of origin.
Despite doing nearly all the work himself, Piuze seems to have limitless energy and drive. He is barely into his third vintage
and Piuze already has the makings of a legendary producer.

As temperatures start to rise and backyard pools get filled, there is nothing more perfect to pair with backyard summertime
fun than rosé. Traditionally, rosé is made by crushing red grapes and allowing the juice to sit with the skins for just a few days,
usually around 48 hours, to allow the juice to obtain some of the color of the skins, but not enough to turn it dark red.
The skins are then removed before fermentation, allowing the juice to remain pink or light orange, or raspberry red;
and for the wine to obtain its crisp, fruit-filled flavor. Whether from Austria, France, Spain, Italy or California (and beyond),
they tend to lean toward a dry, crisp style and are perfect out on the back patio or at brunch on the farm.

"I handcraft my two Napa Valley Cabernet Sauvignons, without compromise, from some of the finest vineyards in the Napa
Valley- a region that I believe can make Cabernet as well, or better, than any other place in the world. These benchland vineyards
are located between Rutherford and St. Helena, where deep, stony alluvial soils promote the ideal growing conditions for the
Cabernet vine. These vines regularly produce some of the most concentrated and superbly ripened fruit anywhere.

"Founded in 1992, Grange des Peres has quickly become arguably the greatest and most respected domaine
in the entire Languedoc region. Located in the village of Aniane, the estate is run by former physiotherapist
Laurent Vaillé. His impeccable resumé includes stints with Gerard Chave and Francois Coche-Dury, and,
as Andrew Jefford writes in The New France, "...this background in wine-craftsmanship is evident in every bottle
that comes from his cellar." The red sees up to two years in wood, but the oak comes across as seamlessly
integrated even upon release. There are also incredibly miniscule quantities of a suave, polished white,
made from Roussanne and Chardonnay. Extremely conscientious viticulture -- low-cropping young vines,
harvesting ripe and healthy fruit -- are de rigeur here."

"The name Borgogno is connected to one of the oldest wine cellars in Piedmont. Started in 1761, Giacomo Borgogno
became the supplier of the boarding school for the sons of the officials of the House of Savoy army.
As time progressed, Borgogno became more and more famous and appreciated by being the official wine
for the celebration of the Italian Unification, and various other stately banquets.
For centuries, Borgogno House has been in the habit of bottling considerable amounts of the best vintages and putting it
aside for further refinement for at least ten years. This results in extraordinarily rounded and balanced wines
that acquire treasured and diversified aromas. Before being released, the bottles are checked one by one and decanted
through a delicate but rapid manual operation that also allows elimination of sediments."

Little about López de Heredia has changed in the 132 years since its founding. The family adheres to a winemaking
doctrine blueprinted in the 1880's--to make wine only from their own vineyards, using natural yeasts, long aging
in the wood, and no filtration at bottling. The winery and vineyards, some of the first in the region, are located in the
Rioja Alta's capital city, Haro. Unlike most of its competitors, now owned by outside investors, López de Heredia is owned-and every detail of its operation is handled--by the family who founded it. The bodega is now in the capable hands of the
family's youngest generation, Maria José, Mercedes, and Julio Cèsar. López de Heredia helped the region develop the
approach that still defines it today: reliance on Tempranillo grapes, long aging in old American oak casks, organic
farming practices, and a style that aims for silky elegance rather than muscular fruitiness under a veneer of new oak.

Few dispute that La Rioja Alta S.A is the leading quality oriented producer in the Rioja, focusing on making wines
in the traditional Rioja manner. The company is adamant about not using French oak, keeping the unique Rioja style which
has been developed since the end of the 19th century. La Rioja Alta S.A. is unique in its ability to supply large quantities of
fully mature wines of world class quality. The wines are kept at the bodega a minimum of 5 years before release,
though some are kept for as long as 15 or 20 years. The Bodega was formed in 1890 as a partnership of 5 quality-conscious
growers keen to exploit the export potential for well-made, 'modern' Rioja (the founding date is celebrated with the annual
890' Gran Reserva bottling. In 1904, La Rioja Alta absorbed Bodegas Ardanza, and gained access to some of the finest vineyards

To lovers of Spanish wines, Vega Sicilia needs no introduction. The 100 hectares estate is by far the
most prestigious wine producer in Spain, ranking with the world's greatest names.
The Valbuena is released after 5 years (3 years in cask and 2 years in bottle). The Unico is always at least 10 years old
and sometimes as much as 25 years old before release, depending on the quality of the vintage and its capacity
to age for long periods in cask and bottle. The wines are truly remarkable with enormous complexity, and richness.
The soft velvety texture, gorgeous mature flavours of black fruit, leather and oak are absolutely unique.
Alion was founded by the legendary estate, in 1986. The first vintage to be commercialized was 1991.
The wine made here is a more modern wine than the Unico or Valbuena. The winery is located
just down the road from Vega Sicilia and the wine is made from 100% Tempranillo from 37 hectares that were planted
in 1986 as well as some younger vines planted at Vega Sicilia.
